Strawberries and Cream Cake

This cake is A LOT OF WORK. It is expensive to make. Mine fell all apart, but I did try to make it in 2 layers because I didn't have 3 pans. I loved the frosting....but wasn't wild on the taste of the actual cake. My stepdaughter, who I made it for said it was delicious....so that is what matters. But, it was the hardest cake I have ever made.

Whole Grain Waffles

Really tasty waffles. I used oatmeal instead of wheat germ, as another reviewer suggested. At the end I threw in some chocolate chips for the kids. YUM!

Chocolate Chip Banana Muffins

This is a really great recipe! My daughter literally gobbles these up! I use 1 cup white and 3/4 cup whole wheat flour, 1/4 cup oil and 1/4 cup applesauce, and mini semi-sweet morsels (1 cup). To me the trick is to really MASH up the bananas so you don't end up with banana chunks. I also used vanilla yogart (no sugar added), because that is what I had on hand. Thanks for sharing!

Classic Candied Sweet Potatoes

Chicken and Summer Squash

I like this recipe. I used chicken cutlets, and salted, peppered and then added garlic powder and some dried basil. When I flipped them I did the same on the second side. I used yellow squash, zucchini and tomato like the original recipe. There was not a lot of fat to drain so I just used the juices, and spices to flavor the squash a bit. I am not a veggie lover, but this is a very palateable meal for me to eat a lot of tasty veggies. YUM!

Good Old Fashioned Pancakes

Just perfect! I added 2T of sugar because my family has a sweet tooth, and are used to a boxed mix. But, no more boxed mixes for us! My daughter, who didn't like pancakes asks for these several times a week!!!! THANKS for the great recipe!!

Flax and Sunflower Seed Bread

Tasty, great. I had to let it rise for 2 hrs. because I was running out, but it made for a little lighter loaf. I also added a little more yeast, because my first loaf was a little brick like (but still tasty). I added less sunflowers, and some oat bran. YUM.

Basil Pesto Bread

This recipe was fine. I had some ladies over, so I sliced the bread especially thin, but I had LOTS leftover. I would make again. But, it wasn't spectacular.

Spinach and Potato Frittata

Clemons Family Bean Dip

I made this for a family Mexican Fiesta party and it was a huge hit. We had lots of little ones and even sans the jalepenos everyone gobbled down the dip. It is a dip you can play with, but I made as described. YUM!

Wedding Cake Frosting

Smushed Apples and Sweet Potatoes

Even my 2 and 4 year olds ate this (with some butter mixed in). So, it gets a 5 from me. I didn't have a granny apple, so used golden, but we all liked it and will make again. Great with pork!!
