My favorite family cooking traditions
My whole family is in Galena Territory twice a year, once at Christmas and again at 4th of July. We rent out a vacation home and it usually includes a fully stocked kitchen. My mom just created cooking/cleaning teams to make things easier and a little more organized. Seems to me that it's gotten a little competitive - now we see who can cook up the best meal of the trip.
My cooking triumphs
Pulling off dinner for my in-laws. My husbands parents came in from Albania for the first time since we were married. I got the recipe for Grecian Pork Tenderloin off of this site. Since I had been to Albania, I was aware of the incredible beef, chicken and fish that they were used to back home - so I thought pork would be a safe option. It was a hit! Everything tasted wonderful, the portion sizes were perfect for 4 people and I even had salad, bread and wine to go with it. I think they thought I slaved for hours.
My cooking tragedies
When my lo-carb "Nut & Seed" bread went up in price again at our local bread bakery, I decided to try it out for myself. I thought "it shouldn't be that hard, if i just get all the right ingredients and then throw it in the bread machine." It was also my first time using the bread machine. So we through it all together, making sure our yeast measurements were accurate. We even got all the flax seeds, walnuts, sunflower kernals - everything went in. It turned out like rubber. I accidentally dropped a big glob on the floor and 0 out of 3 dogs would even swallow it down.

Smothered Mexican Lasagna
I've made this several times and will make it many, many, more times - consider it a staple! First, if you're using flour tortillas, take the time while prepping the other ingredients to toast the tortillas just for a few minutes. I always make enough for leftovers the next day and this seemed to be a good solution for the sogginess. I added black beans to the meat mixture and only drained them a little so i didn't need the 2 cups of water after that. I usually cut the taco seasoning to only 1/2 a packet. I usually don't keep green chili peppers on hand so i substitute chopped green onion or fresh chives. Only 4 stars, since there were modifications but still a keeper. Delish!

Health Nut Blueberry Muffins
These were delicious. I didn't have buttermilk on hand so I also used milk + 1T lemon juice to make the full cup. I also used applesauce in place of the oil. The only other change I made was at the end of the prep when I had everything mixed but the blueberries. I filled each muffin cup halfway with the batter, tossed a small handful of blueberries in, then topped each one with more batter and stirred. I would actually do this with the walnuts next time, too. My husbands first response was, "These taste really healthy but they're awesome. Hey, I think I only got 1 nut in the whole muffin." Will be making them again very soon!

Shrimp Couscous Salad
This is a new favorite and I'm new to couscous as well. I added black beans and corn and added parmesan in place of the feta cheese. Make enough to have leftovers since the flavors mix and become more robust - we thought it was better the second day!
