Roast Chicken with Cracked Peppercorn Sauce

This was a great recipe. I tweaked a bit, substituting white wine for the vermouth and milk thickened with flour for the cream. I also added a bit of herbs de provence to the chicken. The peppercorn sauce was a delicious little gravy, I wish there was more of it! There will be next time I make this, and there definitely will be a next time. I served it with mashed potatoes and peas and some tasty dinner rolls.

White Chili II

Delicious! I used a green bell pepper instead of yellow, because it's what I had, and used 3 large jalapenos + a small can of diced mild fire roasted chiles. Had a really nice heat to it. I will definitely make this again.

Creole Butter Beans

Delicious! I was looking for a new way to cook beans, and this was it. I made a few adjustments, cutting the flour and brown sugar for health reasons, decreasing the water to about 2/3 cup, using dry mustard instead of prepared mustard, and 2 tsp of sriracha chili sauce. I also added about 1/2 tsp of cajun seasoning and a sauteed chicken breast. I'll up the chili sauce a bit next time, as it didn't have quite as much heat as it could have, but I was worried about making it too spicy my first time making it. The chicken was a nice addition, giving the dish some more texture, but it definitely doesn't need it. I'll definitely be making this again, with or without chicken.

I cooked it in a frying pan, about a minute on each side until partially browned. It was the perfect texture and went great with a curry I made. I also added some cracked pepper to the mixture at the very beginning. Easy, tasty recipe. I will make it again.

Cambodian Chicken Soup

This recipe is pretty good. I've made it a few times, never having every ingredient, and it's always turned out really tasty. It can get a little like a mush sometimes, but the flavors are really great.
