My cooking triumphs
Adapting family favorites to gluten-free & dairy free recipes. Know I'm successful when the kids ask for repeat meals or when my son says, "Hey! Mom's getting the hang of this wheat free cooking!" He is not GF so it's a huge compliment.

Watermelon Cooler Slushy
Light, refreshing, tasty. Not really a fan of watermelon, but I liked this. Perfect for a hot day, when you just can't quench your thirst and is quick and easy to prepare. Mine wasn't true slushy consistency, but adding more ice cubes might help with that.

Cabbage Jambalaya
This was an unexpected success! Even my cabbage haters loved it and asked if they could have it again the next day, and my crew isn't keen on leftovers. I made 2 changes. 1. sauteed the cabbage in a T of bacon drippings. Added the crumbled bacon (5 strips) to the jambalaya. 2) I chopped carrots and added those, because I didn't have celery. Otherwise I followed the recipe. It was fantastic and inexpensive. A new family favorite. Very satisfying on a rainy fall day.

Nutty Wild Rice Salad with Kiwifruit and Red Grapes
Make more dressing than recommended. Doesn't flavor the salad as is. Extra dressing helps to increase the flavor. Made with dried cranberries and mandarin oranges.
