Jim's Cheddar Onion Soda Bread
This is delicious, but not really soda bread. More like a giant yummy biscuit. Excellent flavor

Apple Pie Muffins
Substituted oil for the butter and ground flax seed/water for the egg due to allergies and it was excellent!! Gets better with each day- dense and moist, would be good with cinnamon in the batter if you wanted to sktip the streusel.

Colorado Green Chili (Chile Verde)
Only used about 1 cup of broth, otherwise kept the recipe the same. I used roasted NM Hatch chilis, a jar of salsa verde from Trader Joes. Placed it all in the crock pot 2 hours on high, 4 hours on low and ate the next day....delicious!
