Spicy Shredded Beef

Yummy! I had 2 lb of beef, so I doubled everything. At 2 hours, there was way too much liquid, so I removed the lid and simmered for another hour. While hot, it was still too juicy for tacos, but as it cooled, it turned into the perfect taco. However, it was almost gone by then because my guests and I had been picking at it all afternoon. The only change I made was the addition of green chilis. If you like cumin, don't be shy. The cumin smell is overpowering initially, but is delightful in the end. I'll be making this again soon.

White Chocolate Chip Oatmeal Cookies

These are the BEST cookies I've ever had! I crushed a white chocolate bar and added butterschotch chips, but really the cookie would taste good with anything mixed in! My brother-in-law comes from a long line of bakers and even he said, "Wow!".

Quick and Easy Chicken Noodle Soup

This was very good. I used homemade turkey broth, whole wheat pasta spirals, and added garlic and red bell pepper to the sauteed veggies. I'll certainly make this again.

Mexican Cucumber Salad

As written, this is a 4. I changed it to suit my tastes with cherry tomatoes rather than stewed, fresh cilantro, and I added jicama for a crunch. It was a hit for tailgating and even better left over.

I made this crustless, and I left out the mushrooms because hubby doesn't like them, but otherwise it was as listed and it was excellent. My 3 year-old asked for it for days.

Golden Apple Potato Salad

This is okay - rather bland. For my taste, it would have more bacon and more mustard. The apples give a fresh edge to potato salad.

Stuffed Shells I

I love these shells. The filling is just right. Hubby gave it a 4 because he prefers ricotta, but I love cottage cheese. Side note: the filling was sufficient for half the shells. Maybe I over-filled?

Slow Cooker Dump and Go Cheesy Chicken

This tastes like Campbell's. The 3 stars are for the chicken. Moist and tender, but I started with frozen chicken breast on high for 2 hrs, then low for 5 hrs. It's a good place to start, but as written, it's chicken in undiluted Campbell's.

It's Chili by George!!

Excellent chili! I used canned chopped tomatoes rather than tomato juice, I added red bell pepper and I used the crock pot. I got rave reviews from the whole family.

Cheesy Zucchini Casserole I

I followed the recipe exact, except I substituted mozzarella for the cheddar. It was good but the onion was overpowering. And I really like onions. Next time I'll cut the onion in half and add a protein.

Southwestern Turkey Soup

This recipe is a great starter, to modify to your liking. I used turkey broth, added black beans, corn and used fresh cilantro. I put it in the crock pot on high for 4 hours, then low until served. I'll be making this after every turkey!

Creamy Spinach Soup

YUMMY! I didn't change a thing and all my dinner guests raved about this soup. My picky 2 year old liked it so much that he was drinking it straight from the bowl! This is a keeper!
