Bourbon Pecan Chicken

The chicken with pecans was fine, though I had trouble with the pecans not wanting to stick to the chicken and also burning. I ended up baking the chicken to get it fully cooked but not burnt. The sauce was overpowering and my boyfriend, a fan of bourbon when drinking, did not like the bourbon being in the sauce. This was also an incredibly messy dish. I will not be making it again.

Broiled Tilapia Parmesan

Extremely easy to make and it tasted very nice. It's much lighter than your usual chicken parmesan, since tilapia is such a mild fish. Gets kind of pricey when tilapia is $4.99/lb., but it's a light, healthy meal.

Corn Bread Loaf

BBQ Chicken Pizza I

This pizza is an exercise in kick-you-in-the-teeth flavors combating. I would lessen the cilantro, lessen the BBQ sauce because it made the sauce too runny, and reduce both the sugar and the honey. I won't make this again.

Grandma Ople's Apple Pie

The pies turned out fine but the quantities in that recipe are wacky. She must've been using the world's smallest Granny Smith Apples, because I bought 8, ended up using 6, and the 6 I used were enough to fill 2 deep dish pie crusts. I also added cinnamon to the apples. This was a much less dry apple pie than I'm used to; I usually don't like them because the crust is incredibly dry and powdery, but the liquid on top of this helped. I like the gooeyness in the middle. Served with ice cream.

Boilermaker Tailgate Chili

I cut out a few of the spicier ingredients and the beer, added some macaroni, and really enjoyed this chilli. It was quite thick and very flavorful. My boyfriend and a friend of mine ate dinner with me and we all enjoyed it. My boyfriend and I continued to eat on this chilli for several days afterward.

Prosciutto Wrapped Asparagus

The prosciutto didn't get cooked fully through even after 20 minutes at 450 and the asparagus was too crispy.

Banana Pudding IV

The cream cheese wouldn't mix in very well and the pudding was too rich and thick with it. I much prefer a lighter pudding. For a banana pudding, this doesn't taste at all like bananas.

Easy Lasagna II

The noodles are a little more firm than what I'm used to, but they're definitely not undercooked. I changed the recipe to use more Parmesan than Mozzarella. Other changes included leaving out the parsley but putting in Italian seasoning. Very tasty!

Cheddar Baked Chicken

I substituted a Colby/Monteray Jack blend for the Cheddar, but it was still great! I love this recipe. The chicken I used also had big knockers, so I only had to use two breasts for the 6-serving recipe.
