Kung Pao Chicken

I have to disagree with everyone saying it's restaurant quality. I just didn't care for it. I had 2lbs of chicken so I quadrupled the sauce recipe. I cut down on the cornstarch like suggested and added a little more chili paste. Where's the bell peppers and chili peppers? Even with 1/4 of the cornstarch the sauce was too gelatinous. I will keep looking for a good kung pao recipe.

Mexican Fire Rice

Yum! I threw everything except the dairy in my rice cooker. Instead of the breakfast sausage I used "Mexican Style" chorizo. Then I added a little chopped onion, garlic, cumin, cilantro and Goya complete seasoning. After it was done I mixed it with the sour cream and half of the cheddar cheese. I sprinkled the rest on top. It came out fantastic. I've played around with other rice mixes but this has been the best so far with a few changes. Thanks!

Jeera Fried Rice

The flavors in this are absolutely excellent. I was worried about biting into the peppercorns but they really are not spicy once you cook then down that long. My husband (who greatly dislikes most Indian food) loved this and requested more! The fried onions on top were a great touch.

Zippy Burgers

I was a little worried about the amount of liquid being mixed in at first. The meat was very soggy, but after it was cooked it was excellent and very juicy. I didn't have any broth on hand, so I just made some with a few bouillon cubes and omitted the extra salt. The only thing I would change next time is to add a little more pepper. I like my burgers bold and this could use a little more kick!

Chicken Chimichangas

I love recipes like these because you can substitute what ingredients you like or dislike. I browned up some chorizo to go in these with sauteed peppers and onions. Fantastic. My husband requests these once a month now.

White Cheese Chicken Lasagna

Made this for my 5th wedding anniversary. I was a little skeptical of the sauce at first, but boy was I wrong. Instead of the dried basil I added almost 1/2 cup chopped fresh basil because I love a lot of basil in my food. I also took the bacon suggestion and it really does add something. Incredibly easy to make. Most of the ingredients I have on hand usually. I will definitely be making this again!

Grandma's Green Bean Casserole

Excellent recipe. I was asked to bring a green bean casserole to Thanksgiving and when I showed up with this, my family was shocked I didn't bring the normal fried onion and mushroom soup variety. After tasting it, everyone asked for the recipe. Now everytime we have a family gathering I am asked to bring this dish. Thanks!

Korean Spicy Marinated Pork (Dae Ji Bool Gogi)

Fantastic! I love spicy food and this had just the right amount of heat for me. I also don't understand the people saying there was too much vinegar. I couldn't taste it at all in the finished product. This was my first attempt at cooking anything Korean and I think it turned out pretty darn good. I made homemade Mandoo and Jap Chae to go with it. After peeling the ginger I used the peeler to make very thin slices of it and then chopped it with a knife. Since I am diabetic, instead of sugar I used six packets of Stevia. I followed the recipe to a T other than that one substitution. I threw the marinated onions in the pan and served those on the side. I found the gochujang at our local international grocery store. It came in a very large tub of sorts (1kg) and it was only five dollars. I will definitely be making this again. Even my skeptical husband cleaned his plate!

Fajita Marinade I

Not spicy enough for me. I added some chili powder to try and compensate. Next time I think I need to marinate it longer. Wasn't flavorful enough after three hours.

Tex-Mex Burger with Cajun Mayo

Burgers were great, just a little too much Cajun seasoning. Don't get me wrong, I love spice, but next time I think I need a lower salt version. It kind of made the meat a little overbearing.

Korean BBQ Chicken Marinade

Oh man this was good! I added 1 tablespoon of freshed chopped garlic, 1 teaspoon of sesame oil and a few dried chilis and let it marinate overnight. The next day I grilled them on my Foreman (It was raining). This turned out amazing! It charred just slightly on the outsides of some pieces and it was absolutely lovely. I will definitely be rotating this one in every once in a while!
