Butter Bean Burgers

AWESOME! I used white navy beans, no hot peppers and used half cheddar half Parmesan! It was awesome! My 2 year old crumbled crackers while i chopped it was so fun, and my husband said they reminded him of white castle! This is definitely a recipe to change and make your own!

Apple Crisp II

WOWOWOWIE! This was the best dessert that i have had in years! It was PERFECT just the way it is! I used 4 very large breaburn apples! I'm going to make half a portion next time because we ate TOO much!!

Acorn Squash Soup

This was pretty freaking awesome! I cut and cored two acorn squashes and steamed them in a pot of water before starting the soup. This worked great!

Pumpkin Chili

I was very excited to try this seasonal chili. My husband liked it, but i was not ecstatic about it. I feel like there could have been more ingredients to give the chili a less soupy feel and the recipe could have called for more pumpkin! I'll make again, but i'll add more beans, some cut pumpkin and more vegetables!

Cauliflower and Broccoli Bake

This was AMAZING wit some changes! I used one onion, two cloves of garlic and a can of white beans sauteed mixed with steamed cauliflower and broccoli. I also used a little over one cup of milk. I will make this again for sure! Thank you!!

Pizza Casserole

I made this recipe vegetarian, with soy beef crumbles. It was pretty good :). It needs seasoning, and some cheese mixed through the casserole but other than that it was quick and pretty good! :)

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This was amazing! I used a huge, very crisp Fuji apple and it was just awesome! Follow the recipe and you'll be pleased! Didn't even use the plain yogurt! Dunked sweet potato rolls in it and the pair of divine!

Roquefort Pear Salad

Basic British Scones

I threw this all in my kitchen aid at the same time, mixed it, kinda rolled it out and cut them. They are AWESOME! I brushed them with butter and milk at the end! AWESOME!

Butternut Squash Soup

This was wonderful!! I used vegggie broth (6c) instead of water and cubes and olive oil instead of butter. I also used 8oz whipped cream cheese. This was unbelievable! :)

I was expecting something a bit more exotic, but it tasted like a great spice cake! I made a basic cocoa icing and put a very thin layer in between to 8" rounds. It was pretty great!

Basic Pasta

This recipe is a good start. I love added crushed red pepper flakes, or dried basil too. You will need to add about a 1/2 tbs evoo to make it a little less sticky! :)

The Best Vegetarian Chili in the World

This recipe makes SO MUCH! I used my big pot, and it wasn't even big enough! I threw in some extra beans, added zucchini and a can of diced tomatoes with jalapeños. i also only used one can of crushed tomatoes. this was awesome topper to pasta cheese and onions or cornbread! Will make again!
