Balsamic Baked Tilapia

Good stuff. Had to make sub the blue cheese w/ feta since I think blue cheese is one of the worst tasting substances on the planet. Cook time is approximately 20 minutes. I might try a little shorter time next time.

Grilled Tuna Steaks with Dill Sauce

The marinade is basic at best, and I recommend using one w/ some soy, and ginger added to the basic EVOO Lemon mixture. Now the dill sauce is simply amazing. 4 stars for the sauce alone.

Asian Beef with Snow Peas

Really needs to be in a wok. The meat is a little chewy and my sauce didn't thicken when following this recipe. Flavor was decent though.

Tuna Noodle Casserole I

Good but a little plain for what I was expecting.. it feels like I want to add something else to this recipe, but I don't know what it is yet. 2nd Try: went to 1T chili powder, doubled the worcheteshire, added 1 can roasted green chili's diced, 4cloves garlic diced, a bit of onion powder (simple onion), used 9oz albacore tuna, and maybe 1t of chipotle powder

Delicious Egg Salad for Sandwiches

Great base recipe. Go w/ low fat mayo or my pref fat free miracle whip (I like MW better). A bit of garlic salt & pepper in the finish. Extra onion, use spicy mustard, I might try spicy paprika next time. I also like the addition of some diced red/green peppers in the mix.

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

I used a bigger I think 11" pan. I needed extra eggs I used 5 whole & 2 white's only. Extra garlic & parsley only 1/3 cup of parm as I ran out. Looks good, smells good, tastes great. I will stick w/ my changes going forward, this was great & the fiance enjoyed it. Easy to reheat in the microwave in the morning if you don't have time for this much cooking before work. Oh and I used the jalapeno sausage by al fresco, it has a pretty good spice bite to it, and adds a nice spice too the whole thing.

Asian Style Country Ribs

Great tenderness. I followed the suggestion of putting 1/2 the marrinade in the slow cooker w/ the ribs. This gave me a very salty final product. I think it could use more ginger, more lime juice, less soy sauce (maybe 2/3 low sodium) then try again.

sub feta for blue cheese, because well I hate blue cheese.. I also subbed 1/2 EVOO 1/2 Sesame oil for the walnut oil (availability). This is my favorite salad!

Roasted sweet potatoes with apples and maple-sage butter

Great, but a bit more trouble than it might be worth. I would use more sage and at least double the syrup and ensure you toss the syrup lemon juice in the bowl, not the still hot pan or you'll melt off most of the flavor. It's a bit tough to time these to come out at the same time as 15min isn't enough time on the Sweet Potatoes.

Slow Cooker Sweet Chicken Chili

Delicious! Only change was subbing kidney beans for a can of hot chili beans, adding a couple tablespoons of my homemade chili powder, and adding a can of fire roasted diced tomatoes. (~2lbs of chicken breast was perfect)

Marinated Spicy Pork Chops

Delicious marrinade on the chops. Adds a slightly sweet slightly salty slightly tangy taste to chops. I would use a nice thick cut chop for this and grill to med at about 6min per side on high heat.
