Guacamole

Might be 5 stars after meddling in the fridge for a while. I just made it up and it needed way more garlic at least triple and some garlic powder. I also added a minced jalapeno, & some chipotle powder to kick it up then added more cilantro as it seemed to give it a nice touch.

Eggplant Parmesan II

Very good, needs a little crushed red pepper, I like my homemade sauce instead of basic which of course has a bunch of meat and other peppers and spices in it. I also find the baking step is better done on a broil to get a little more crispness in the outside of the eggplant. 1plant scaled works great for about 3 people.

Caramelized Baked Chicken

Made this w/ 1/2t of chili paste and 3 shots of beyond Z. Definitely only needed 1 shot of the Z as it was spicy as hell. 2 shakes of Z would be better. You do need to boil down and thicken the sauce to get what your looking for though. The taste is fantastic but recipe needs modification.

Kay's Spaghetti and Lasagna Sauce

Adds: Can Tomato Sauce, Tomato Paste, dbl'd the garlic & added garlic powder, at least doubled the basil and oregano, probably tripled, a few bay leaves, 1.6lbs of meat, some roasted red peppers, and about 1T of crushed red pepper.

Chili Chicken

Delicious... but I didn't really do it this way at all. I used 3T honey, 2T scheswan sauce, 4T chili sauce, 3T soy sauce, some basil, and a hit of garlic. Marinaded boneless skinless chicken thighs over night then baked at 400 for 45min. Maybe this is actually a new recipe...

Easy Pork Chop Casserole

Mods: Used about 1/4lb diced mushrooms, 1 ringed medium onion, 1 poblano pepper diced. Softened all them in the pan w/ the drippings from the chops after they'd been browned. baked to 160.

Spicy Haddock

OK. I don't think I'm a fan of Haddock.. it's a bit to fishy for me. This recipe has some ok spice but it's just a compliment to the fishiness. I'd also slightly reduce the paprika as that was the key taste and use Sesame oil instead of olive oil if I was going to make this again.

BBQ Bacon Ranch Dip

Really good. Mods: Added some garlic to the cheese, used 1 neufs something cheese & 1 lowfat phildelphia and whipped in blender to get them a bit smoother. Also subbed quartered grape tomatos which worked well and topped w/ some dieced green onion. (used about 80% of the ranch package)

Simple Ranchy Breaded Fish Fillets

Tastes fantastic, a bit of a PITA to make. Needs more oil than listed to fry, I'd like to try to bake it as the frying oil adds quite a bit of fat. I watered out the "paste" w/ a mixed egg.. may have used milk if I had it.
