Tasty Tuna Burgers

Made several changes for flavor, but loved it. 2 can's of tuna 1 egg white & 1 whole egg 1 bunch of green onion & 1T of dried minced onion. 1Cup breadcrumbs 1/4cup chili sauce & 1/3cup light miracle whip 1/3 cup diced green pepper & celery Extra hot sauce Replaced black pepper w/ Cayenne Very good little burgers, whoever said it's like a crab cake is right. These reminded me of a crab cake slider but w/ Tuna.

Hudson's Baked Tilapia with Dill Sauce

FANTASTIC! 15min in the oven and they were perfectly cooked. Used light miracle whip for the Mayo & fat free yogurt instead of Sour Cream. Also took the garlic powder up to a heaping 1/2t (could have been more). The fish had great flavor with a light spice from the cajun dusting, and the dill sauces was slightly sweet from the yogurt, and complimented the fish VERY well.

Sweet and Spicy Sweet Potatoes

Delicious. I think you can go with a bit less oil.. or just 3T on maybe 3 sweet potatoes. I upped the sugar a bit (unintentionally) and used sweet paprika. Doubled the garlic & onion powder and used Allepo chili powder & Chipotle powder instead of chili powder & cayenne (about 1t each).

Chili Rellenos Casserole

A good base recipe, but needs work to be good. Definitely sub the tomato sauce for enchilada sauce. Use 2/3~3/4 of the listed cheese amount. I used 4 5oz cans of chiles, I think cutting them into big chunks would work better. The recipe also really needs some meat added to the middle layer for a complete meal or it's just too cheesy.

Grilled Brown Sugar Pork Chops

The chops still need a marinade or the glaze just doesn't add enough flavor unless you go thick thick thick with it. It is quite sweet but offsets the pork nicely.

Could use a little bit more kick after the healthy alterations, but still quite good. Changes: more garlic, 1 6oz package turkey pepperoni, use very lean ground beef, low fat cheese & skim milk.

Swiss Chicken Casserole II

A good dinner. The broccoli add is a real must. I'd love to get a little more flavor into this though, maybe some spice on the chicken or some other seasoning as with the exception of the stuffing mix it does come off a bit bland.

Baked Pork Chops II

Great Sauce, can use a bit of spice via jalapeno or chipotle powder, or cayanee, etc. The cooking time though is WAY off. This is probably done close to 30min for most of the avg grocery store pork chops. I cooked 50 and it was way over done.

Easy Honey Mustard Mozzarella Chicken

Pretty darn good stuff. The bacon & honey mustard add a ton of flavor but they also push the calories up quite a bit. I'd like to try a leaner version next time.

Guacamole

Might be 5 stars after meddling in the fridge for a while. I just made it up and it needed way more garlic at least triple and some garlic powder. I also added a minced jalapeno, & some chipotle powder to kick it up then added more cilantro as it seemed to give it a nice touch.
