Chipotle Crusted Pork Tenderloin

Very good, but the 20min cooking time is excessive. 15min tops for a 1lb tenderloin, I pulled mine at 18 and found it mid-well when I want medium. A 3/4lb like in the recipe would be done in 13~14

Delicious Ham and Potato Soup

Very good and easy soup. I almost doubled the ham, skipped the celery, added about 1.5cups diced carrots and used 1 can of chicken broth in place of some of the water. I also like some toasted garlic in here. *Don't use corn flour.

French Dip Sandwiches

Simple & Delicious. Low sodium soy sauce is recommended. Like most shredded beef style dishes trimming as much fat off as possible before you start will help your final product.

Green Chili Eggs

Just waaaaay too much cheese. Pretty good flavor, but half the cheese and some extra eggs are required along w/ some garlic and seasoning to make this a good dish.

Delicious. As many said you should add more liquid.. 1 to 1.5 soup cans full of water and a bullion cube, or the same of beef broth will work wonderfully. I add-lib'd and added some onion, red pepper, and garlic

Scrambled Egg Muffins

7 egg whites & 7 whole eggs + a sub of turkey sausage to make these a bit healthier. Then made them in larger muffin tins w/ 1/2 cup scoops. This gave 137cal, 8gfat, 2g carb, 14g protein. I think they need a little something to make them pop now though, I'm thinking some hot sauce would really help so I'll try some franks or chipotle sauce in the mix next time. went to 1 heaping t of garlic powder, 3/4t of pepper, 3/4t salt, 1T+ of franks red hot sauce, & a hint of chipotle powder. Also seasoned the ground turkey with garlic, white pepper, chipotle, & alepo.

Very good, but not healthy at all.. this is a way to really pack chicken w/ sweet bbq & sugar. If you didn't shred and throw back in you wouldn't absorb nearly as much.

Cowboy Mashed Potatoes

Probably only 4 stars when you forget the cheese like I did, but very good. You can at least double the pepper (I did & still didn't notice) along w/ the garlic. I also added a little milk for creaminess.

Grilled Tuna Steaks with Dill Sauce

The marinade is basic at best, and I recommend using one w/ some soy, and ginger added to the basic EVOO Lemon mixture. Now the dill sauce is simply amazing. 4 stars for the sauce alone.

Easy Slow Cooker French Dip

5 stars. I like the Joy's revision. Probably worth buying an au jos packet and mixing it w/ the leavings at the end to mix your dipping sauce, I threw it in and cooked in it which works ok. The beef is tender and flavorful, but pulls more than it slices.

Asian Style Country Ribs

Great tenderness. I followed the suggestion of putting 1/2 the marrinade in the slow cooker w/ the ribs. This gave me a very salty final product. I think it could use more ginger, more lime juice, less soy sauce (maybe 2/3 low sodium) then try again.

4.5 stars really. It really should marinade over night and it might help to lightly score the surface. I think an addition of some ginger would be really nice as well.
