Basil Tomato Soup

Comes out pretty good. Upped sugar to 1T dropped 1T of butter and used Fat Free half & half instead of whipping cream. I think running the whole mixture through a blender is a good idea. I also think 2T of sugar wouldn't hurt. In addition I added some red pepper, black pepper, sea salt, & some Italian seasoning.

This came out a lot like a prime rib when I made it. It took quite a bit longer to smoke than I thought it would and I think it would have been better to have smoked lower and longer as it would have been nice to further render.

Jalapeno Popper Spread

Delicious. I used neafaundlin (sic?) creme cheese, light mayo, 2 4oz cans of diced jalapeno & added about a cup of jack cheddar along w/ some on the top mixed w/ some italian seasoned bread crumbs. It came out fantastic.

Italian Breaded Pork Chops

The frying and cooking time are a bit long (2min per side and 20 in the oven is fine at least w/ a thinner pork chop). My biggest issue with these was that they were pretty bland. If I made them again I would probably liberally season the chops before coating, then I would double bread them and make sure to mix some papprika or chili powder into the coating to give them some pop.

Turkey and Quinoa Meatloaf

Very good. an extra egg is a good idea. It's a lot softer than other meatloafs I make, but it tastes great, has a nice texture, and is very healthy.

Stuffed Cabbage Rolls

Quite good, and very simple. The cooking time can be reduced a bit, and I think some other spices mixed in w/ the beef would add a lot to the depth of flavor. (Add 1/4t Ground cumin & Cayenne along w/ 1t garlic powder to the meat).

Honeyed Pork Chops

Delicious, but the cooking instructions are WAY off. A pan sear of 2 minutes per side and 20-25 in the oven would be better. If you sear 5 per side and bake an hour your destroying your meat.

Sesame Tilapia

Only ok. Doesn't really do a whole lot to the fish, and the texture leaves something to be desired. If I try this again I might pan fry the fish to get a little texture to the surface to contrast. Also the cooking time needs to be shortened to no more than 25min unless you want overdone fish. I found 23 was perfect.

Paprika Chicken with Mushrooms

Delicious. I sauteed the onions and some sliced shitake mushrooms in 2T of butter until soft then removed to a bowl. Added another T of butter and continued the recipe as directed. This gave me nearly caramelized onions on completion and was really delicious.
