Delicious Egg Salad for Sandwiches

Great base recipe. Go w/ low fat mayo or my pref fat free miracle whip (I like MW better). A bit of garlic salt & pepper in the finish. Extra onion, use spicy mustard, I might try spicy paprika next time. I also like the addition of some diced red/green peppers in the mix.

Buffalo Chicken Burgers

it came out a little dry on me, and not as much hot sauce taste as I would have liked.. I'm not sure if it's because I let the patty's sit for the day in the fridge or if I overcooked them a little bit. I'll definitely try it again as there was enough good in this.

Grilled Chicken Thighs Tandoori

I liked it more than the fiance. I think the marrinade needs to find a way to permmiate a little more as it doesn't leave a lot on the chicken. I might try poking it w/ a fork a few times next time to try to help it out and maybe thin it down a touch w/ a little oil

sub feta for blue cheese, because well I hate blue cheese.. I also subbed 1/2 EVOO 1/2 Sesame oil for the walnut oil (availability). This is my favorite salad!

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

I used a bigger I think 11" pan. I needed extra eggs I used 5 whole & 2 white's only. Extra garlic & parsley only 1/3 cup of parm as I ran out. Looks good, smells good, tastes great. I will stick w/ my changes going forward, this was great & the fiance enjoyed it. Easy to reheat in the microwave in the morning if you don't have time for this much cooking before work. Oh and I used the jalapeno sausage by al fresco, it has a pretty good spice bite to it, and adds a nice spice too the whole thing.

Baked Teriyaki Chicken

Fantastic as is. I basted at 15min & 30min then at 40 min poured remaining sauce and let it go. Cut down to 1/3 cup brown sugar the 2nd time. This time my sauce thickened up a lot more than last time. Also added a bunch of carrots and foiled the pan w/ some sauce brushed on them as well.

Black Bean and Salsa Soup

A very nice base recipe, but it needs some tweaks. I used some desert pepper company mango salsa, tripled the cumin, added 10 dashes of franks red hot sauce, threw in some powdered pepper (cayenne, arbol, jalepeno). I also added some sauteed pepper, some flake garlic, and a can of whole kernal sweet corner. Followed the reviews to blend 1.5cans of beans and left the other 1/2 full. I think a 3rd can would be better will try that next time.

The ideas & flavors are great in combination, but the health impact here is NUTS! --- To adjust I cut the bacon to 1 thick slice per chicken breast, added a whole onion (carmelized), cut the cheese in half and used just 1 serving (2T) of the honey mustard per piece of chicken. This brings the recipe down to 410 Calories from 930 --- Five Stars 4 taste, 2 for health impact as is. I rated 4 stars for the quality of the base recipe.

Cajun Cabbage with Rice

I really enjoyed this dish. It does need a bit more pop in the spicing than called for I think I doubled the basil, oregano, cayenne, and added a bunch of extra garlic. Oh & I subbed quinoa for the rice.
