Engineer your food!

1st Try: 5th of July food party in my mouth.

Well I've never been a fan of blogs, much less started my own but here goes.

I have no idea what to put in this: whether I should just throw something out there, try to entertain, teach, or other.

Anyway today was RIB DAY!  I love ribs!
First I decided to do a short salt and paprika brine of my big rack of rib for about 30 minutes.
From there I patted dry and rubbed w/ a low sodium soy sauce.  Then rubbed in a thick amount of my dry rub (smoked spanish paprika, lots of brown sugar, lots of garlic, a fair amount of onion, some bacon salt, and a hit of chipotle powder).

Let it rest for 1.5hrs in the fridge then room temperature for another 30 min.  Set up the smoker using a mix of hickory and mesquite soaked in a water/scotch bath.  On to the smoker as close to 200 as I could get for 3 hours.  Turning on the 1& 2 hour marks with a quick basting of a sweet bbq sauce and a hit of reserved rub that had a bit of extra chipotle added to it.

During the middle I made some old fashion potato salad complements of the recipe exchange.

Now I'm mixing a quick leafy salad and the ribs come off the smoker in 15min.  Hope it's good, the yard smells amazing!

So cute that you couldn't wait to taste them before writing to us! I love smoking also, & all things to do w/ the grill. I use my lg. grill (w/ its lid) as a smoker sometimes. Have you ever tried tea-smoking? That gives great flavor to poultry (incl'g. duck), fish, & shrimp! Best to use Lapsang Souchong, but it's been delicious w/ green tea from teabags also. Do read up on a smoking recipe because you have to add ingreds. such as: rice, spices (cinnamon, star anise), etc.
