Slimmers Pumpkin Soup

As mentioned, this was an excellent based soup and was not based on creme. That being said, once it was put through the blender, it was bland. This was very easily fixed with a LOT of spices. When I first saw a dash, I almost laughed. I ended up putting in about 3 tablespoons of nutmeg, 1 tablespoon of ginger, and 4 tablespoons of cinnamon. I also used a sweet potato as suggested. Finally, to give a little nuttier flavor. I added about 1/4 cup of hazelnut fat free cream. This definitely kicked it up. All told it was a lot of fun to work with a girlfriend and figure out what to add to the soup.

Zucchini Risotto

THis was delicious. I used asiago and precrumbled parmesan cheese. Served over a portobello mushroom and covered with red pepper sauce. It was simple and easy, will definitely make again!

Kentucky Butter Cake

Very rarely do I bake anything let alone get asked for recipes, except this Easter when I brought this cake to a friend's place. I did make a few slight changes. I don't have buttermilk or vanilla extract so I used 1/4 c flavored creamer and 3/4 c milk. I also substituted the vanillla for the creamer in the glaze. As suggested, I used a chopstick to make the holes, then I used a funnel in the holes to make sure the yumminess got down the holes. After I flipped it over I sifted powdered sugar then chocolate powder on top. Nevermind the rave reviews, I can't remember the last time I had three pieces of cake in one sitting.

Apple Breakfast Popover

For the jelly I used some cooked apples without the jam portion. I through in some typical apple pie spices. This is a very sweet way to start your day!

Maine Venison Stew

I am very impressed with this simple recipe. I didn't have venison or the browning sauce so I used beef and added in some spices and hot sauce. It is delicious! I think next time I will brown the beef separately to try and separate out the fat easier. I started this at night and put it on low overnight and waking up to these delicious aromas was heaven! I couldn't wait to dive in!

Slow Cooker Cranberry Roast

This is an awesome recipe for any roast. I have made it with beef and with pork tenderloin and it was equally delicious each time. I would recommend putting the cranberry sauce into a bowl and mashing it up before pouring it on top.

Florentine Artichoke Dip

Awesome! One substitution: I used low fat yogurt rather mayonnaise. I simply do not like the way it tastes and it is also a healthier option. It was delicious!!

Baked Stuffed Pumpkin

This was the coolest thing. It was a little sweet for me so I think next time I will cut out the sugar and add real cranberries to have their tang offset it. I'm also an impatient baker and don't measure spices, but next time will make sure to! I over seasoned it a little and it was definitely over powering. All in all, this dish was awesome and I'm looking forward to Thanksgiving.

Tangy Slow Cooker Pork Roast

Did not like much about this, it did not have a punch of taste, i put in potatoes like someone suggested, made sure they were cut small and after numerous hours are still crunchy. not a fan.

Beef Tenderloin with Ginger-Shiitake Brown Butter

Absolutely amazing. I couldn't find mirin at the liquor store so I used plum wine instead. I also used twice the amount of shiitake mushrooms. Next time I may use less butter at the end, but overall amazing.

Cranberry Sauce I

I always hated the look and taste the can shape of cranberry sauce, so when I finally hosted Thanksgiving dinner I decided to make it fresh. While I still do not love the taste, I found it to be much more pleasant and received rave reviews from the fam. I would recommend putting a paper towel over the top of the pot to prevent cranberry splatter. I had it everywhere!

Broiled Tilapia Parmesan

This was a very good recipe. I am personally not a fan of mayonaise, so I used milk and a little extra butter. I forgot to half the recipe so I put the extra topping into some veggies I was frying up, it was delightful.

Blue Cheese, Port, and Walnut Spread

This was absolutely delicious and didn't take long to chill. I didn't have port so I used some cab sav I was drinking. Next time I'll probably use a fun mold to dress it up a bit. The color was rather funny looking and I think shaping it would help.

Honey-Dijon Salmon and Asparagus

This recipe was delicious. It took longer to cook because I didn't separate the fillets and used a pound instead of the recommended 1/2 pound. I also wasn't sure about the aluminum foil so I wrapped the fish twice. I will definitely make again, probably with mashed potatoes.

Alfredo Sauce

I of course, completely screwed up this recipe while making it and put everything in out of order. It still came out to be delicious, but reheating it was a problem. The sauce completely separated and I had oil everywhere the next day. Next time I won't make extra for lunch.

Wine Baked Potato

not a fan of the recipe. It was really hard to cut the potato and just put in the butter, let alone an onion. Once removed from the oven, the smell alone made me not eat these. I won't make this again.
