Harvest Loaf Cake

We grew up making this for Christmas presents. Freezes very well. Have never made with a frosting -- doesn't need one at all. Fabulous warmed up a bit for breakfast!

This has become a staple in our house. I use a bit of flavored oil when adding water, sometimes add some herbs. Easy garlic bread: cook with olive oil and add garlic and sea salt over top. Best pizza ever: pre-bake crust until almost done then add any sort of toppings. Even better if cooked on a grill!

Kansas City Steak Soup

It was OK. Very hearty but we found the sauce a bit thick to call it soup. Our family isn't big on tomatoes with beef but if you like that flavor you'll really like this recipe. I was short on time, so a few changes: cut up potato and microwaved for a few minutes, then added to a pan I had sauteed the onions, celery and carrots in. Then continued sauteeing while I made the roux. Used some pre-cooked steak strips from Costco. Since everything was cooked it only needed to simmer while the biscuits were made and baked. I did as a previous poster suggested making vegetable stock with the onion peels and celery tops. Also added a can of green beans. When we go to unfreeze the leftovers (this makes a ton!) i'll try adding a can or two of beef broth or consumme to make it more soupy.

Pumpkin Cookies II

changes: 1 can pumpkin, 1/2 cup oil, more cinnamon and added nutmeg and ginger. Not very sweet, which is nice among other sweet desserts. It's very light, but tastes a bit floury. Will make again, but use 3tsp cinnamon and more of the other spices. I"ll wait until the second batch comes out of the oven before I decide though!

Jiffy Casserole

Good, basic, hearty. I sliced the potatoes to cook quicker, used 1/3c water, and added worchestershire to the soup mix before pouring. Took about 45 minutes and the potatoes were perfect. Good to eat with a fork, I wouldn't add more liquid.
