Slow Cooker Chicken Taco Soup

Grilled Chipotle Marinated Chicken

Even my kids loved this (and they don't like spicy food). I prepared it exactly as the recipe said, omitting the optional hot sauce but including the salt. The chicken had an incredible flavor, and plenty of bite, but didn't set anyone's mouth on fire. Fabulous recipe! Thanks for sharing it!

Pork Roast with Thyme

This was good, but I had an odd experience while making it. I followed all the directions carefully, but put it in the crockpot for 8 hours on low. About 2 hours into cooking, the garlic had turned BLUE. According to the web, it was likely a reaction between the garlic in the slits in the roast and the vinegar I poured on top (not a danger, totally edible). By the time the roast was done, the color had faded to a brownish green that didn't seem to alarming.

Homemade Shake and Bake Mixture

This was very good! I didn't have celery salt, so I substituted Lawry's seasoned salt. I also used olive oil, hoping to make it a bit healthier. Next time I'll substitute wheat germ for some of the bread crumbs.

Slow Cooker Chicken and Dumplings

We really enjoyed this, but I made some significant changes. Instead of chicken breasts, I used chicken thighs. Instead of cream of chicken soup, I made a double batch of the cream soup substitute found here: http://southernfood.about.com/od/ingredientsubstitutions/r/bl90911a4.htm I added some celery, carrots, nutmeg, salt and pepper and a splash of sherry.

Antipasto Salad

Elegant Wild Rice Soup

Excellent soup! It reminds me of the soup from a certain upscale Minnesota grocery chain. It did need extra chicken broth to thin it out a bit.

Baked Flounder

Easy Deviled Chicken

This is tasty, and goes together quickly. I use a thermometer, and cook the chicken to 155 (the internal temp will rise to 160 while resting). This took about 45 minutes in my oven, even using a glass baking dish. Cooking for an hour and half would have ben WAY too long.

Three Bean Potluck Casserole

This was very good, and went together quickly. I used bbq baked beans and cannellini in place of the butter beans. I drained the kidney beans and cannellini , and added half a beer to make up for the lost liquid. I cooked it in in my crockpot on high for 2 hours (I think another hour would have been better). My crockpot was scraped clean at the neighborhood potluck, so I guess it was a hit!

Caramel Candies

These are decadent! I had some issues with my candy thermometer, but I cooked it to about 250. I poured the mixture into a greased 8x8 pan. If I do it again, I will definitely line the pan with parchment or teflon coated foil. Once the squares were cut, I stuck them in the fridge for a few minutes, then wrapped them in 3" squares of waxed paper.

Grilled Sausage with Potatoes and Green Beans

This was a very easy meal that tasted pretty good, not spectacular, but good. Nothing was overdone or raw, and clean up was a snap. We grilled it over indirect heat.
