Grandma's Lemon Meringue Pie

I made this and it just didn't turn out that great for me (although I would admit that it was mostly due to my boyfriend :P). First off, it is a lot of work...I had to call in back up (my first mistake hahaha). Secondly, my boyfriend couldn't wait for it to chill in the fridge and cut into it too soon :(. Not a good idea. It hadn't set up at all yet. Thirdly, It wasn't lemony enough for our taste. Maybe lemon meringue isn't our thing.

World's Best Peanut Butter Fudge

We love peanut butter fudge...and this a very good recipe. The only issue I have had is that it gets very mushy if left on the counter. We have to keep it wrapped in plastic wrap in the fridge. I haven't used my candy thermometer when making this though, which I think I will try next time. Other than that, it is EXCELLENT!

I made these for a Breast Cancer Awareness Bake-Off at my boyfriend's office. (Everything donated had to be pink). These were pretty tasty. Very sugary. Sold all but a few.

Baked Potato Soup V

I have tried several potato soup recipes from this site and this has been the best so far. I was a bit skeptical about microwaving the potatoes but it was great and super easy! I used real bacon and fat free milk (b/c that's what we had). This is a keeper!

Cake Balls

We love these cake balls (we call them Frosty droppings since I coat them in white chocolate). They are a bit time consuming and difficult to dip in white chocolate (we do not like candy coating bark so I use real chocolates) but they are worth it if you have the time. We usually make red velvet cake, cream cheese frosting, and dip in white chocolate. I also found that even though dipping in white chocolate is universally difficult, Ghiridelli (sp?) seems to work the best for me. It is also much 'whiter' than Hershey's. I would have given five stars if my review was purely based on taste but I took into consideration the time it takes to make them.

Mom's Best Peanut Brittle

This recipe was great! Perfect for holiday gift-giving. Make sure you keep an eye on it though. It seems to go from 280 degrees to 300 very quickly. My first batch got to almost 320 degrees before I could remove the candy thermometer and get the saucepan off of the heat. It was very brown and not very good. But batches 2-4 were perfect! I used a little less than a cup of peanuts and warmed my pan in the oven while I was cooking the brittle, as another reviewer suggested. I will be making this every holiday season!
