BLT Dip

This was a hit at my daughter's first birthday. I cut up the tomato the night before and let it drain on a paper towel in a container that I placed in the fridge. I mixed 3/4 of the bacon and 1/4 cup of green onion into the mayo/sour cream mixture and put it into the fridge overnight. Before serving, I mixed in 3/4 of the tomatoes and topped with the remaining tomatoes, bacon, and a little green onion. It didn't "WOW" me, like a another reviwer stated, but it was good none the less. It well received by the majority of the guests. I mean it has bacon...how could it be bad????

Mushroom Rice Pilaf

Good dish! Used fresh mushrooms, I just cooked them with the other veggies. Maybe add chicken next time for a main dish. My one year old loved it.

Cabbage Rolls II

Never had cabbage rolls but these were really good. Since I didn't have very lean beef, I cooked it before stuffing the cabbage leaves. Changed the texture (from what I can see in the pictures) but was still good. Might have to follow another reviewer's suggestion of freezing the cabbage to make the leaves easier to remove next time. I ripped quite a few!

Taco Seasoning I

This is awesome!!! I quadruple the recipe and keep in a baggie in the cupboard. Then it is always ready to go for taco night! I have used it as a marinade/rub on steak as well. Was excellent that way too!

Watermelon Pops

These were really cute! I froze inbetween layers which caused problems when removing the popsicles from the molds. The red layer did not touch the stick so it almost always broke off in the mold, that is when I managed to get them off on the stick and it didn't just rip out!. I think I will try adding more water next time though...too JELLO-y for us.

Incredibly Cheesy Turkey Meatloaf

Tried this out this week...it was ok. Nothing fabulous but not bad either. The texture was a little strange but I guess that is because we are used to hamburger meatloaf...or maybe too many bread crumbs??? Who knows. Might tweek and try again. I cut my cheese in little cubes and didn't have any issues with bubbling/burning. I think grating it would be better though.

Lemonade Pie III

Very sweet and lemon-y...just what we were looking for. I made the crust from lemon cookies instead of using graham cracker though. Might try the graham cracker next time. Also added a little food coloring to make it more yellow.

Creamy Au Gratin Potatoes

I wanted to make this for Easter so I have been testing it for the past few weeks and it has been a let down every time. I can make a white sauce, but this ends up lumpy and not at all creamy after I get it out of the oven. I have tried three times now and it just isn't working out. I am trying again this week, with some modifications. Hopefully it turns out but I have a back up potato recipe on stand-by. I saw that another reviewer had this problem as well. Any suggestions....? UPDATE: Still didn't work out. I am giving up!!!

We used frozen green beans (thawed) b/c I despise canned veggies. I also left the parmsean up to the diner to add themselves. I am personally not a fan of the parm. Very good.

Mushroom Spinach Soup

I omitted the sherry and leeks since we did not have any. I also left all of the veggies in. Why strain them out? They are tasty! I am not a spinach person but I LOVE this soup!
