Best Cream Of Broccoli Soup

This was terrific! Used lots of peeled, chopped broccoli stems in addition to florets. Made it vegan with rice milk, Not Chikn bullion, and an olive oil roux. Delicious and so healthy! Will definitely be making this again.

Sally's Spinach Mashed Potatoes

Slow Cooker Cream of Potato Soup

I made this soup on the stove and added 1 t. or so of dill weed based on other recipes I saw. I also used more bullion (1 cube/cup of water) and olive oil instead of butter. It was amazing. I think I might skip the additional salt next time since the bullion already has a lot, but I rarely use salt, so it might have just seemed a little extra salty to me and others would not think it overly salty. Definitely the best potato leek soup recipe I've ever made, and I've made a lot of them. A keeper for sure. I think it would adapt nicely to become a clam chowder base as well.

Pumpkin Flax Quickbread

Fantastic! Followed the update from Astrophe and used the whole can of pumpkin and no applesauce. Also increased whole wheat flour to 2/3 c. and white down to 1 c. Will probably use all whole wheat and some add'l gluten next time. Blended whole flax seeds in the blender to make flax seed meal. Made 12 muffins that were delish!

Egg and Cheese Puffs

We loved these! I made just half a batch (there are only 2 of us) and used lots of healthy options, like egg beaters, fat-free cottage cheese, fat free cheddar, no meat, no butter, no salt, whole wheat flour. I also had some fresh green chiles so I used those instead of canned, and I added sliced olives. They did stick a little to the muffin cups, even though I sprayed them, so I think next time I'd just bake them in the muffin pan so I could run the knife around the edge and not waste as much. I don't want to miss a bite! We had them for dinner, but we'll be having them for breakfast the rest of the week. Definitely a keeper recipe. Fast, easy, and best of all, TASTY! Thanks :)

Red Raspberry Vinaigrette

Mushroom Lentil Barley Stew

LOVED this recipe. Super easy and very tasty. I used mushroom broth instead of plain vegetable broth and fresh shiitakes (3) instead of dried because the store I went to didn't have dried. I also added precooked barley that I had in the freezer instead of uncooked. This is a brilliant recipe and will be on our table often this fall and winter.

Grilled Tuna Steaks with Dill Sauce

I actually only used the sauce on tuna I made using the ginger citrus recipe tuna steaks recipe from allrecipes. The sauce was amazing! I agree with the rater who said it's even better the next day.

Grilled Mustard Potato Salad

All my friends say this is the best potato salad ever. I use EVOO in place of canola, and balsamic vinegar in place of white (a little less than called for as balsamic is pretty flavorful). I also add about 1 T of regular mustard, double the Dijon mustard and add fresh oregano. Sometimes I skip the Yummers! (Sometimes I skip the grilling part, too, if I'm in a rush or being lazy. It's still great!) Now if we could just get the summer weather to arrive, we'd be all set!

Key Lime Cheesecake I

I followed someone else's suggestion to replace eggs and sugar with sweetened condensed milk (I used the lowfat kind). I also added 1 c. flaked coconut to the crust and topped with flaked coconut. Amazing!!! All my friends raved - even ones who normally pass up dessert loved it!

Cheesy Baked Cauliflower

This was fantastic! I steamed the cauliflower in the microwave. Also used less butter (only 1 T.) which I melted, then I mixed everything together instead of sprinkling the cheese over the cauliflower. I'll definitely make this again!!

Cottage Mashed Potatoes

These potatoes were awesome. I added a little bit of smoked Gouda (maybe 1/4 c.) because I wanted to use it up. And I left out the onion because I didn't have it, although if I did have it I'd put it in because I think it would be good in there. Simply scrumptious and so easy! Highly recommended.

Make-Ahead Hot Buttered Rum Mix
