Pineapple Cheesecake Squares

Reviewed: May 14, 2006
Everyone at church loved this. I used orange juice instead of pineapple in the filling so I would not have to open another can of pineapple. The pineapple juice in the can is plenty for the topping!

Egg and Sausage Casserole

Reviewed: May 14, 2006
This was great. Everyone at church loved it. I used 10 eggs instead of 8 and added 3/4 cup milk. I also cut down on the cheese - used 1 cup each. Also added onion and mushroons to sausage when I cooked it. Added a little salt and pepper also.

Sweet and Crunchy Salad

Reviewed: Jul. 17, 2006
This is excellent. As suggested I used oriental flavored noodles and did not have white wine vinegar so I used red wine vinegar. It turned out great!!!! I did not soak the noodles - I just broke them in small chunks and they turned out great.

Coconut Pound Cake

Reviewed: Jan. 27, 2007
Absolutely delicious. I used 1 cup butter instead of butter/shortening combination. I also used frozen coconut which probably made it even moister and therefore required a little longer baking - about 1 hour 40 minutes. Otherwise it was GREAT!!!!!!!!!!

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Jan. 30, 2007
FANTASTIC. I have made this recipe 3 times in the past month and everyone I have served it to loves it. The only change I made was to add some mandarin oranges. It adds a little more color and they taste good with the dressing.

Asparagus Chicken Crepes

Reviewed: Feb. 2, 2007
THIS WAS GREAT!!!!! My husband likes very plain food. When I put this on the table he said "Kentucky Fried Chicken would be better". Then, after trying it, he thought it was excellent. The last step of putting cream and mayo on top and then broiling sounded different but believe me, it made it wonderful. The only thing I changed was that after filling the crepes I put the fold on top so nothing would run out the bottom - it turned out perfect.

I took the suggestion of others and used limeade instead of lemonade. It is great. Not too tart - not too sweet. SOOOOO easy to make. Will definitely make it again, and again, and again!!!!!!!

Crispy Cucumbers and Tomatoes in Dill Dressing

Reviewed: Jun. 29, 2007
I finally found a cucumber recipe my husband loves. He likes a tart dressing and with only 1 tsp. sugar, this is it! I made full amount of dressing but only used 1 cucumber, 1 tomato and 1/2 cup onion and felt it was just the right amount of dressing. I also let it marinade a little longer. This was more than enough for the two of us.

Stuffed Green Peppers I

Reviewed: Jul. 3, 2007
These were excellent. I did not cook peppers in boiling water. I filled them raw and they came out of the oven a little crunchy - really good. I did add some italian seasoning to the beef mixture. I also added 1/2 can tomato bisque soup to the beef mixture. I used the other 1 1/2 cans to make the gravy that went over the peppers. Instead of water I mixed the tomato soup with some milk. Before filling green peppers I put 1/2 slice swiss cheese in bottom. After baking 25-30 minutes I put a slice on top and baked til melted. Another success for my husband.

Nana's Mashed Turnip

Reviewed: Dec. 8, 2007
This was fantastic. I used 3 medium potatoes and 3 medium turnips. I also boiled some diced onions with the turnips/potatoes. I probably could have used a little less milk. Next time I will gradually add the milk until I get the proper consistency.

Elegant Oyster Soup

Reviewed: Jan. 19, 2008
This was excellent. I wanted to make half the recipe and did not want to open a second can of chicken broth for just 2 ounces so I used 1 can broth and 3/4 cup cream. For half the recipe I used an 8 ounce jar oysters and would have liked more. Next time I will use 12 ounces.

Corned Beef and Cabbage II

Reviewed: Feb. 2, 2008
This was delicious. I took the advice of others and cooked it in an oven bag at 250 for 5 hours. After 4 hours I opened the bag and took out the orange slices and put in the cabbage. I forgot the apples but it was great without. A definite keeper.
