Scallops Provencale

Reviewed: Jul. 27, 2014
This is fantastic. I did leave out the wine and it was perfect! I made it with just scallops but it would be good with a combination of seafood or just one seafood of any type!!!

Chris' Corned Beef and Cabbage II

Reviewed: Feb. 21, 2014
This was delicious. I took the advice of others and cooked it in an oven bag at 250 for 5 hours. After 4 hours I opened the bag and took out the orange slices and put in the cabbage. I forgot the apples but it was great without. A definite keeper.

Seven Layer Taco Dip

Reviewed: Oct. 9, 2012
I loved this recipe with a few changed. I did not use the green pepper or lettuce. I did make guacomole and put over the refried beans. Really went well!

My husband really liked this. I used chicken broth instead of water and added boullion powder to taste. I also added peas.

Scallops with White Wine Sauce II

Reviewed: Jul. 2, 2012
I would rate this a 5 but I changed it somewhatl WhatI made was delicious. I tripled the sauce when making dinner for my husband only. I added juice of 1/2 lemon and it was tart. Next time will eliminate the lemon. I cooked the scallops in the sauce before cooking the sauce down. I then took out scallops, added the butter and cooked til somewhat thick. I used regular onions and cut up some tomatoes to put on top as well as cheese.

Hearty Minestrone

Reviewed: Nov. 16, 2011
This is absolutely delicious. I did find it needed more broth even though I did not add extra vegetables. I added two additional cans beef broth and 1/4 cup ketchup. SUPER

Chris' Sloppy Joes

Reviewed: Sep. 6, 2011
This is really good. I did combine the sauce ingredients separate before adding to the meat as I found I do not like it too soupy. I also used shredded pork and it was excellent!

This is fantastic. After cooking the bacon I did cook some chopped onions in the bacon grease and added to the salad - really added to the flavor.

Stuffed Pork Chops III

Reviewed: Aug. 5, 2011
This was sooo tender. I did make up stove top stuffing and filled the pork chops with it. I also found after cooking 5 minutes on each side I then added the broth and cooked another 10 minutes per side and it was plenty of time. My chops were fairly thick. Delicious!

Chris' Reuben Dip

Reviewed: Jun. 18, 2011
This is fantastic. I did find I needed to use more dressing on top - used 3/4 cup mayo and 3/4 cup thousand island dressing. I also used 3/4# corned beef. The amounts called for seemed a little lean for a 9 x 13 pan.

Chris' Roasted Vegetables

Reviewed: Jan. 31, 2011
This is fantastic. Since I usually bake with another item that needs a lower temperature, I usually cook at 475 for 1/2 hour and then remove from oven, cook my other dish and add the veggies back for the last 15 minutes to heat through.
