Slow Cooker Buffalo Chicken Pizza Loaf

I was amazed how good pizza can be in the crock pot! I did make some changes. I used gluten free flour. I couldn't taste the difference. I also used BBQ sauce because my kids don't like buffalo. I brushed the inside of the pot with coconut oil. It stuck in just one spot, but with a hot crock pot it was still really difficult to get it out. Maybe I'll try a thick coat of shortening next time. The one thing we didn't like was that the crust was too big for the pot and folded over the top of the pizza. That was way too much crust. I will cut back on the crust next time and make it smaller or cut off the excess. Very good though!

Like melted marshmallows. Heavy and gooey. Kids thought it was good. Just okay. Depends what you put it on I guess.

Eggplant Pepper Relish

This is the first time I tried eggplant, and it turns out that I don't like it. But the recipe sounded really good, so I replaced the eggplant with zucchini and it was a hit!

Roasted Garlic Cauliflower

This has become my famous dish that everyone asks for from me. I love it even more because its simple to make. My kids still don't eat it since they won't touch vegetables in general, but I have had lots of requests for the recipe.

Spicy Mexican Style Zucchini Casserole

I thought this was fabulous! I don't keep pinto beans on hand so I used a can of chili beans and added a pound of cooked chicken breast. We ate it plain and ate in taco shells also.

Silver's Savory Chicken and Broccoli Casserole

My husband and I loved this dish. I used what I had...chicken boullion to make broth and cheddar cheese. I was leary to double the sauce, but I did make extra. I cooked it down until it was thick and creamy. It was great, but I will double it next time. I was hoping to see if my 3 year old would eat it, but I don't know. Like so many other things it didn't get close enough to her mouth to find out.
