Morning Glory Muffins I

Super yummy - 1 year old really liked them. Substituted the apple butter and oil and used one cup of applesauce and they were very moist and delicious. Made in mini muffin pans - cook about 11 mins.

Cherry Fluff

I used no sugar added cherry pie filling, low-fat condensed milk and light cool whip. Color is pretty but next time I'll add some chopped nuts.

Double Tomato Bruschetta

This was great and pretty easy to make for a party - I made the tomato mixture the night before and also sliced the bread the night before. Day of the party I brushed the bread with garlic butter and toasted in 400 degree oven for about 5 minutes then added the toppings and put back in the oven for another 5 minutes (saved me from having to watch the oven the whole time under the broiler). I used two cans of petite diced tomatos that I drained well but did use fresh basil.

Buckeye Balls

Had to add a little more peanut butter to get the right consistency (although I did use reduced fat). Also would have used MORE chocolate next time - mine was pretty thick so it went on heavy which turned out great but I didn't have enough.

Tortilla Rollups IV

Took to work - all gone, and have shared the recipe. Made the cream cheese and spread on the tortillas the night before and put in the fridge rolled up in a baggie then sliced and plated the next day - it was worth it, the flavors had time to meld together. Instead of using dry ranch dressing, I used 1/2 pkg of taco seasoning and somce chopped green onion.

Pizza Pasta

Not bad - put the sliced turkey pepperoni on the top so it would get crispy and used pizza sausage instead of ground beef. Could have used about 1/2 jar more of the spaghetti sauce and I think I would have preferred mostaccioli noodles.

Incredibly Cheesy Turkey Meatloaf

Caramel Bars

Followed the recipe almost exactly - skipped the nuts and used a 9x9 pan that I sprayed with non-stick spray 1st - they come out of the pan prety easily, next time I'll double the crumb topping. I also used dark chocolate - they are really rich.

Chicken Fried Chicken

This was a treat for us since we normally don't eat fried chicken. I cut up the breasts and it cooked quite fast and perfect - crispy on the outside. Please measure the seasoning salt - I got a little carried away. Would make again when craving comfort food or my neice and nephew were here.

Grilled Pizza Wraps

Loved how easy these were. Used turkey pepperoni and sprayed a non-stick pan, no need for the extra butter to try and cut down on the fat. Will make again and again!

Original Homemade Italian Beef

Only added one packet of the dry dressing but did use zesty italian and we added the peppers in the beginning, juice and all - beef turned out kinda hot from the peppers but yummy. Serve on crusty rolls with provolone that we 1st spread with a garlic butter mixed with ranch dressing and it was fabulous.

Slow-Cooker Chicken Tortilla Soup

Love this soup - very filling and super easy to dump all the ingredients into the crock pot and walk away. I even left out the cilantro and just seasoned to taste and it was great.

These were a great change for dinner. Used only 1 apple and thought it was plenty - to save time, I simply boiled my chicken breast and then seasoned before adding to the quesadilla.

BBQ Pork for Sandwiches

What a great EASY meal! I used a shoulder roast and added diced onion and a clove of garlic while in the crockpot. Cooked on high one hour then low for about 6 hours and it was just falling apart. Will definitely make again!

These tast awesome - hubby would have eaten the uncooked dough. Mine were a little dry and I had a hard time keeping it together but they still came out pretty good, we like ours soft so the 8 minutes was enough.
