Sweet and Sour Chicken I

This was excellent! I am a vegetarian, so I used tofu instead of chicken. The breading of the tofu was a bit messy but worth it. I often miss the crunch of fried food and this really hit the spot. I added baking powder to all purpose flour instead of using self rising. I served it with fried rice, a great recipe for making take out at home (and it really is just as good!).

Quick and Easy Chicken Noodle Soup

American Lasagna

very good basic recipe! I followed the advice of another reviewer and also added cream cheese, about 3 ounces. I do think this added a nice touch, but I think it would've been just as good without. It definitely added some calories and fat, but this recipe may be modified to become at least lower-calorie if not low calorie.

Mushroom Risotto

I made this for New Years Eve dinner along with a simple asparagus recipe with olive oil and sesame seeds. I made some changes as suggested by others on this site... I used 1% milk and about 1/4 cup half and half as I didn't have any cream. I ended up using 4 cups of broth as I was too impatient to do the full 5! It was excellent... my boyfriend was impressed! And wonderful leftovers which is always a bonus :)

this is a fabulous and easy recipe. I made it along with the best vegetarian chili ever recipe from this site. A non-cornbread fan friend of mine told me it's the best cornbread she's ever had :)

Chuck's Favorite Mac and Cheese

This is pretty good. I had a college friend who made something similar so I was happy to find this recipe. I cut down on the cottage cheese, butter, and omit the bread crumbs. You can change this recipe to your liking and be fine. If you prefer creamy macaroni & cheese like velvetta than you probably won't like this but if you like all kinds, give it a shot!
