Soy Milk Pancakes

Reviewed: Aug. 18, 2007
I didn't have any regular milk, so was looking for soy recipe. This is perfect. I will most likely use this as my regular recipe. I did not use eggs or the almond extract. I always use mayo in my pancake so that also took care of the oil. I had to add a little more soy milk, but that could be because I routinely miss measure. I did measure the baking powder accurately. These were perfect. This would make a great dry mix to keep on hand.

Cheater Pot Pie

Reviewed: Dec. 13, 2009
Very Good. Hubs was going to the store and i thought this would be quick. It was. I did modify. I am a vegetarian so I used vegetarian chick'n patties. I used one can of mushroom sick. I was going to add a potato soup but it looked like too much. So I added an extra 3/4 cup of water. I also used the grands biscuits. Next time I will either use regular or roll the grands into a crust I also added tumeric and poultry seasoning and a little marsala wine. It really did taste lie I had used a chicken soup. Excellent base recipe. Definitely going into the rotation. Am also thinking of using the celery soup when I makes a vegetable pot pie.

Easy to Remember Pie Crust

Reviewed: Feb. 4, 2010
This is the perfect recipe for a beginner. I only made a pie crust because I was too lazy to go the store. Boy was this good. I used coconut oil that I put in the freeezer for a bit. Made it very solid. And replace a tablespoon of water with balsamic. So good. If I make a strawberry pie will do the same thing again, just add a bit of sugar. I also made it in food processor. I cut in the oil, and let it form the dough. This is a perfect recipe. (PS I have only made on pie crust before almost ten years ago.)

Way simpler than it looks. Just keep setting the timer to go off every 15 min and you are good to go.

Taco Seasoning I

Reviewed: May 14, 2010
Excellent. I subbed coriander for the oregano because I did not have any. Since it was dried and only a quarter tsp. did not think it would be that big of a deal. Next time I make it I will not add the salt. I used canned refried beans and Morningstar Farms fake meat. So the whole situation made for too much salt. So I will omit it from this seasoning. Way better than the packaged stuff. And it just smelled so good!!!!

Black Bean Rice Burgers

Reviewed: Aug. 10, 2010
This is a base recipe. A good one but a base none the less. There is no seasoning outside of the salsa. I did make a changes to veganize it. First I cooked the the rice in a "no beef" broth. To which I added catsup and worsteschire, and a dash of liquid smoke. When the rice was done but still hot I added a tablespoon of ground flaxseed. The egg makes too much moisture. I stirred the flax into the rice until it had bound. I also added Stacy's hamburger seasoning from this site. After all that I put in my rinsed beans. I mashed with a fork and took my time so the starch would have time to come out and create a binder. By the time I was done it was hold but I but the mixture in the fridge so they would hold up perfectly. I fried them up in the skillet and they were pretty good. Nice texture. This is a great base to play around with, especially with such inexpensive ingredients. Thanks a lot!

Corn Dogs

Reviewed: Sep. 23, 2010
These turned out more like hushpuppie consistency on my hot dogs. However the flavor was beyond amazing. I used egg sub and vegan hot dogs. However it just occured to me this could be the reason for the consistency issue. Had I read the reviews I would have gotten my batter super cold first. Thanks these were great.

Best Chocolate Chip Cookies

Reviewed: Dec. 27, 2010
My kids wanted mm cookies and i used this recipe. it is off the chain. The raw batter was perfect cookie dough flavor. The cookies themselves turned out rather cakey. Another review suggested a small or medium egg. But I like cakey cookies so it worked out great for me. I did put the batter in the freezer for 15 min. so it couid firm up. Great recipe.

Lemonade Cheesecake

Reviewed: Mar. 22, 2011
Made this and it was great. Used one of those pour in the bottle packs because it was easier. It was raspberry lemondade flavor. Tasted so good. My dad who loves lemon pie seriously enoyed it. One of my favorite pies.

Flourless Oatmeal Blueberry Pancakes

Reviewed: Apr. 5, 2011
Made these without blueberries because I was without them. I did pulverize the oats in the food processor. These were really good. I guess the pulverizing made them less oatmeal like, because they did not taste like either oatmeal or regular pancakes. They did get "crispy", but softened up once I added butter. I think I may add some apple cinnamon instant oatmeal next time, and take out the sugar. Definitely better than white flour and/or pancake mix.

Broccoli and Tofu Stir Fry

Reviewed: Apr. 12, 2011
This was good. Only made a few changes that I don't think really affected the recipe. I deleted the nuts becacuse my kids don't like them. I used veggie chicken broth to make it vegetarian, and red wine for sherry since I was out. Gotta say this tastes like the restaurant version without any mystery ingredients. Gonna keep this around for the future.

Tahini Cookies

Reviewed: Jun. 27, 2011
There really is no need to bake these. I make these same cookies with peaonut butter. And they are no bake. The heat will just kill the nutrients. I also used flaxseeds. These tasted great. I looked for a tahini cookie because my youngest does not like peanut butter and the tahini has such a mild flavor. Thanks for the recipe.
