Baked Coconut Shrimp

Super easy and tasty!! We used a sweet chile pre-made sauce for dipping and it was amazing! I may even make these for snacks for parties!

Hummus III

I failed to read other reviews before I started on this one, so I have nobody to blame but myself for my so-so outcome! Next time I make this (and there will be a next time), I will definitely add less tahini and probably a little extra garlic. I added some roasted red peppers to mine (because I love the flavor) and I think that helped with the tahini overload!

Bread Machine Calzone

I can really only speak for the dough and cook time, because that's all I use this recipe for. When I make calzones, I cut the dough into four equal sections and fill them with cheese, veggies, and meat (but never sauce, that gets served on the side), and then cook as directed. So easy and customizable for everyone in the house!

Holiday Chicken Salad

Fabulous!! I'd like to make it again having all the ingredients on hand-I didn't have green onions, so I used a small amount of red onion. It was still very good with this change, so I'm sure it will be amazing with the right ingredients!

Szechwan Shrimp

I just can't believe how good this tastes for how easy it is! I did as some other reviewers suggested and tripled the sauce portion, since I wanted to add in some veggies (one bag frozen snap peas, one bag frozen stir-fry pepper mix). It was PERFECT. Just the right amount of sauce! Since I had fresh shrimp, I cooked them first and set them to the side before completing the recipe as written. Amazing! I'll definitely be making this fairly often!

Stuffed Pepper Soup IV

My husband and I LOVE this "soup". I made it exactly as written (with the exception of brown rice instead of white), and thought it was fantastic. It's best to start with the knowledge that this is thick like a stew, but since we actually prefer that to liquidy soup it was perfect! It reheats very well too, so it's great to take to work! :) Next time I think I'll make it with ground turkey!

Chicken Tortilla Soup V.I

I only gave 4 stars because I felt that to make it a five star recipe it needed some changes. I used the advice of some other reviewers to come up with this variation: I used 8 cups of chicken broth, 3 chicken breasts, 1 can of corn, added black beans, and doubled the salsa and spices. We served it with sour cream, cheese, and tortilla strips. A tip for shredding the chicken: if you put cooked breasts in a KitchenAid mixer with the paddle attachment while they're still hot, running it at medium speed for about 20 seconds will shred it up for you! So much easier than using forks :)

Zesty Slow Cooker Chicken Barbecue

My husband and I enjoyed this recipe, and it was incredibly easy to throw together! I think it may have been even better with a little chopped onion or garlic in the sauce, but that's just our taste. I'll definitely keep this on hand for when I'm super busy!

Chicken and Red Wine Sauce

The flavor was pretty good, but I had some trouble with the garlic. Adding it at the beginning, I found it started to burn before the chicken was done (not a great flavor...). If I make this again, I will add it at the same time as the wine instead.
