Baked Coconut Shrimp

Reviewed: Aug. 13, 2012
Super easy and tasty!! We used a sweet chile pre-made sauce for dipping and it was amazing! I may even make these for snacks for parties!

Hummus III

Reviewed: Apr. 1, 2012
I failed to read other reviews before I started on this one, so I have nobody to blame but myself for my so-so outcome! Next time I make this (and there will be a next time), I will definitely add less tahini and probably a little extra garlic. I added some roasted red peppers to mine (because I love the flavor) and I think that helped with the tahini overload!

Bread Machine Calzone

Reviewed: Jan. 15, 2012
I can really only speak for the dough and cook time, because that's all I use this recipe for. When I make calzones, I cut the dough into four equal sections and fill them with cheese, veggies, and meat (but never sauce, that gets served on the side), and then cook as directed. So easy and customizable for everyone in the house!

This was very quick, easy, and tasty! It was well received as a holiday gift, and I will be keeping it on file for next year!

Holiday Chicken Salad

Reviewed: Jan. 10, 2012
Fabulous!! I'd like to make it again having all the ingredients on hand-I didn't have green onions, so I used a small amount of red onion. It was still very good with this change, so I'm sure it will be amazing with the right ingredients!

Szechwan Shrimp

Reviewed: Dec. 14, 2011
I just can't believe how good this tastes for how easy it is! I did as some other reviewers suggested and tripled the sauce portion, since I wanted to add in some veggies (one bag frozen snap peas, one bag frozen stir-fry pepper mix). It was PERFECT. Just the right amount of sauce! Since I had fresh shrimp, I cooked them first and set them to the side before completing the recipe as written. Amazing! I'll definitely be making this fairly often!

Stuffed Pepper Soup IV

Reviewed: Dec. 1, 2011
My husband and I LOVE this "soup". I made it exactly as written (with the exception of brown rice instead of white), and thought it was fantastic. It's best to start with the knowledge that this is thick like a stew, but since we actually prefer that to liquidy soup it was perfect! It reheats very well too, so it's great to take to work! :) Next time I think I'll make it with ground turkey!

Chicken Tortilla Soup V.I

Reviewed: Nov. 4, 2011
I only gave 4 stars because I felt that to make it a five star recipe it needed some changes. I used the advice of some other reviewers to come up with this variation: I used 8 cups of chicken broth, 3 chicken breasts, 1 can of corn, added black beans, and doubled the salsa and spices. We served it with sour cream, cheese, and tortilla strips. A tip for shredding the chicken: if you put cooked breasts in a KitchenAid mixer with the paddle attachment while they're still hot, running it at medium speed for about 20 seconds will shred it up for you! So much easier than using forks :)

Zesty Slow Cooker Chicken Barbecue

Reviewed: Oct. 5, 2011
My husband and I enjoyed this recipe, and it was incredibly easy to throw together! I think it may have been even better with a little chopped onion or garlic in the sauce, but that's just our taste. I'll definitely keep this on hand for when I'm super busy!

Chicken and Red Wine Sauce

Reviewed: Sep. 12, 2011
The flavor was pretty good, but I had some trouble with the garlic. Adding it at the beginning, I found it started to burn before the chicken was done (not a great flavor...). If I make this again, I will add it at the same time as the wine instead.

Fresh Pear Cake

Reviewed: Sep. 12, 2011
This was a big hit! I had some pears that were getting just a little too squishy to eat, so I found this to use them up. It made a great "breakfast", and got rave reviews from the people I work with! My only gripe is that I wish the pear flavor stood out a little more.

Easy Mexican Casserole

Reviewed: Sep. 12, 2011
I'm compromising between my rating and my husband's! I enjoyed it, but my opinion was it wasn't good enough to warrant all the calories. Hubs went out of his way to tell me how amazing it was, and that NEVER happens! So, I guess if you don't mind the fat and calories this one's a winner! I added a packet of taco seasoning to the ground beef as I was cooking it, and I used a can of kidney beans since that's all I had on hand. The green onions are important to the flavor, and if I made it again I might even add a little extra!

Peach Pound Cake

Reviewed: Aug. 8, 2011
This is fantastic! I used fresh peaches, and since my vanilla extract is double strength I didn't alter the vanilla-to-almond ratio any. I will definitely be making this again when I have extra peaches lying around!

The Best Banana Bread

This was a great base recipe! To suit our taste, I added some vanilla extract, cinnamon, and a little nutmeg. Amazing, and super quick to put together-a definite keeper!

Lentils with Tomatoes

Reviewed: Apr. 13, 2011
I was searching for something healthy to make on one of those "ran out of groceries" days, and this was great! I had to make a couple of small changes to suit what was in the pantry-I used a large can of italian seasoned diced tomatoes, and I added a couple of cloves of garlic and a sprinkle of basil to enhance the flavor of the tomatoes. I also cooked the lentils in a vegetable broth instead of plain water. I served this with brown rice, and even my carnivorous husband said it was good! I think next time I'll add a little extra tomato, but that's just because I love me some 'maters!

Pizza Dough I

Reviewed: Apr. 4, 2011
I love this dough because it's sooo easy! Often I'll omit the salt and use two teaspoons of a spice blend (like the kind you add to olive oil to dip bread in) to give it a little flavor. While I enjoy it as is, one time I made the dough and then got called away for a bit....it was even better when it got to rest/rise a bit!

Buffalo Chicken Chili

Reviewed: Apr. 4, 2011
Even though I had to make a couple of substitutions, this was awesome! I used diced tomatoes instead of crushed, and I only had about half of the chili powder it called for so I just cut back the other spices proportionally and added a little extra RedHot sauce. Mmm! My husband sprinkled a little blue cheese on his and said it was amazing :)
