Spinach and Feta Pita Bake

We added grilled chicken pieces, no mushrooms or pesto and spread the bread with tapenade and it was a huge success...rave reviews from the fam and not one bite left over. Great crispy crust too!

Simple Scones

This was an excellent, fools-proof recipe! My 12 year old daughter made them for her tea party and they looked so professional...great look and flavor. She used dried orange-cranberries and it was a perfect balance of flavors with tea. Thanks for the recipe!

Grandma's Lemon Meringue Pie

Let me break it down a little: For Flavor and Ease this pie gets 5 stars. For overal consistency and directions it gets 4 stars. Here are some valuable tips to perfection of this delicious pie! You will need at least 5 tblsp of cornstarch as my pie was a little runny at less. And, make sure to let your pie cool completely before making the meringue topping otherwise your merigue will being to melt underneath. That's it! Great tasting recipe and made a lemon meringue pie lover out of me. Thanks for the recipe Grandma!!!

Waffles I

Tried and True! Love this recipe and have been following it for several years and is the popular vote in my house on "fun Fridays." I like a much lighter waffle consistency so I use exactly 2 whole cups of milk and add about a 1/4 cup of water. Perfection.

Mary's Roasted Red Pepper Dip

This was a very well, got ingrediants on hand, and easy recipe to follow. Rave reviews at a party but I couldn't help but feel like something was missing...I think if maybe green chillies or something spicy was added it would have been a 5 star for sure! Thanks for the recipe!!

Emergency Garlic Bread

I gave this a 5 star because it is exactly what it is..."emergency garlic bread" that tastes great! I actually have done this before and the recipe here was a delightful reminder. You can put all your favorite toppings and with good results.

One - Two - Three - Mexican Macaroni Salad

Excellent macaroni salad! This is so easy and it tastes like it was sooo hard to make. I will make this over and over again. I took advise of others and added the corn and black beans which was a great balance of mexican flavors. Highly recommend this for potluck socials...it'll be a hit! The black olives are a MUST!

Dill Lemon Chicken Pasta Salad

Very refreshing! Great taste and you can use macaroni pasta too. My 2 year old LOVED it and ate left overs for days. I scaled down the recipe for 5 servings and it still made a lot.

Cheesy Chicken Pepper Pasta

This recipe was super tasty! I took the advise of others and added onions and tomatoes to the chicken sautee. I used salt to taste on all of it and because I didn't have the muenster(?) cheese I improvised with what I had ie provolone, colby and jack and parmesean cheese and I tripled the garlic cloves (we love garlic) and I kept whisking without stopping till I got the right consistency. This was a huge hit with the family, everyone had seconds!!

Italian Chicken with Garlic and Lemon

I rated this recipe based on how it's written. This can be a delicious recipe with some tweeking. Fry the potatoes with salt and italian seasoning and add chopped onions then finish cooking till golden and reserve oil in a bowl then transfer potatoes to a baking pan. While frying potatoes, fry up chicken pieces of boneless chicken breasts and season with lemon pepper and salt to taste. While all is cooking up, mix all the other ingredients together in the bowl with the oil. Top the potatoes with cooked chicken then drizzle oil mixture over the entire meal. Put in oven for 30 minutes and serve. Make sure to put enough salt to bring out all the flavors before serving. Also, limit the oil, it doesn't have to be a greasy mess, use good judgement here. This turned out great! Family loved it, no left overs.

Sweet Irish Bread

Considering you don't need yeast for this recipe, it turned out WONDERFUL! I had the kids help make it and they loved the end result. The entire bread was gone in one night. I hate bisquick so trust me that it doesn't come out like bisquick. Eat it warm with a pat of butter, great comfort food.
