Pumpkin Pancakes

I started making these pumpkin pancakes to get some fruit into my no veggie, no fruit son. It worked like a charm. I make it with both canned and fresh pumpkin, whatever I have on hand. Now, I make up 1 cup of whatever I have laying around - banana, carrots, whatever - he doesn't know the difference. They always taste amazing. Love how little sugar there is - the slightly sweet flavour is just right. 5 stars all the way for this wonderfully versatile recipe!

Banana Blueberry Muffins

These turned out great! I couldn't find my reg recipe, so I did a search for a quick and easy one and found this one. I used 2 cups of banana, because that's how much I had. Used pastry flour (2 cups, plus 2 tbls), because again, that's what I had. Chocolate chips instead of blueberries and the kids gobbled them up!

All Day Macaroni and Cheese

I'm giving this a 3, because although I'm not sure what it was that I did worng, it must have been something . I thought I followed the recipe exactly, but it could have been user error. Pay attention while you're making this!!! I threw the whole batch away after my family each tried a bite. Too bad, all that cheese!

Chocolate Chip Banana Muffins

I substituted applesauce for all the oil, added a few tblspns each of flax meal and wheat germ for added nutrition (you can't taste it at all!), and halved the choc chips. It made 24 standard sized muffins for me. My 1 year old and 3 year old both loved them! Super moist! A few people commented on the "baking powder" taste - whenever I mix my dry ingredients, I mix thoroughly with a whisk to get everything combined, then pour through my sifter - you will never ever have that problem again. (tip - if adding wheat germ/flax/oatmeal or any other whole grain to make your baked goods more nutritious, make sure to add it to the wet ingredients - don't put it through the sifter, or you'll find some grains get stuck and come find their way out in your next batch of frosting, no matter how well you clean it!)

Roast Beef and Yorkshire Pudding

Amazing recipe. Great on both counts. I've never made Yorkshire pudding before, but I've enjoyed it many times. My Yorkshires didn't turn out as I would have expected, though I'm quite sure it was user error. They looked a little funny, but they tasted INCREDIBLE! Thanks!

Apple-Onion Pork Chops

Beautiful flavour! I didn't have any wine or cider vinegar, so I added 1 tb white vinegar and 2 tb applejuice. I browned the chops, added the onions and apples, them covered and put the skillet in the oven for 20 minutes. Gorgeous. Thanks for the recipe!

Jenn's Out Of This World Spaghetti and Meatballs

Beautiful! I didn't have crushed tomatoes or tomato paste - But I did have a jar of plain old sauce. I used that along with the rest of the recommended seasoning (dried oregano though). Just fantastic! Thanks Jenn!!!!! My in-laws loved it!

Cherry-Pistachio Bark

Turned out gorgeous! Substituted cranberries for the cherries, and after I ran out of pistachios, used sliced almonds. Put them in pretty see-through boxes and tied with a bright red ribbon. GORGEOUS for Christmas gifts!
