Velvety Pumpkin Soup With Blue Cheese and Bacon

Reviewed: Dec. 23, 2010
YUM! I served this for first course on thanksgiving this year and it was a big hit. The only changes I made was I used pumpkin pie filling and therefore omitted the pumpkin pie spice and molasses. I was a little worried that it would come across too sweet so I sauteed 2 onions in butter and added the remaining ingredients as written to that. I didn't use as much stock (I used veggie to make this vegetarian) as was called for or as much half and half. I added the garnish at the end and also added chives for color. My husband said this was his favorite dish of the day. I am making again to bring to christmas dinner. Thanks so much!

Creamy Cilantro Chicken with a Kick

Reviewed: Jul. 19, 2010
I really enjoyed the sauce in this recipe. I followed the recipe exactly with the addition of one green onion and a chipotle in adobo instead of Serrano. After cooking the sauce off, I had to resist the urge to drink it up! It was so good! After the chicken cooked, I poured the pan juices into the sauce and cooked a little while longer. That made the sauce even better! Served it all with brown rice so i could use all the sauce. I'm not sure what people did wrong who didn't enjoy this recipe... I also don't understand the picture for this recipe because the sauce is a very dark green when finished.. Hmm. My next time making this will be with tofu instead of chicken! Thank you for this simple and delicious new sauce!

Lemon Corn and Zucchini

Reviewed: Jul. 19, 2010
This was really good! I used cilantro instead of dill because I served it with a dish that was made with cilantro (Creamy Cilantro Chicken with a Kick) and I sprinkled with shredded cheddar right before serving. My corn-hating husband liked it with the cheese addition! I LOVED it with and without the cheese! Thanks for sharing!

The Best Stuffed Mushrooms

Reviewed: Jan. 1, 2010
These were great - even the non mushroom eater in my house liked them! I chopped up the mushroom stems and used them in the filling as well. I used 1/3 fat cream cheese and shredded Parmesan cheese. The first time I made them, the filling had a little pesto and sundried tomato mixed in and they were really great!

Buffalo Chicken Dip

Reviewed: Sep. 7, 2009
I used Blue Cheese Dressing instead of Ranch and because I was short on time, I just dumped everything into the crock pot. I microwaved it for 5 minutes to soften the cream cheese and start the melting then put it on high for about 30 minutes til it was melted through. It was a big hit. i served it with wheat thins and celery sticks.

Greek Chicken Burgers with Feta

Reviewed: Sep. 3, 2009
the only thing i changed was i used ground turkey and added a few minced garlic cloves. these were spectacular. i made a sauce from miracle whip and sriracha (those were the only things i had, really) and it added a good sweet/spiciness. my fiance actually said "this may be the best burger i've ever had" and he wants it to go on rotation for company! thanks for the recipe!

Pork Apple Burgers

Reviewed: Jul. 1, 2009
these were great and i only made a few minor changes: i used ponzu sauce instead of teriyaki, i topped them cheddar, i grilled the pineapple slices and smeared the buns with bbq sauce. my bf isn't pork fan but he absolutely loved these! really juicy and tasty. thanks!

Fast and Easy Tofu Lo-Mein

Reviewed: Aug. 17, 2008
i thought this was ok. i gave it 4 stars for its convenience factor. i thought the tofu tasted a little bland. i decided to spice it up by finishing this with a few splashes of ponzu sauce. i served it with egg drop soup II. it was a good, fast meal.

Tuna Lime Tostadas

Reviewed: Aug. 13, 2008
These are pretty good! be sure to use the albacore tuna or they will be too fishy! you can't even really tell it's tuna if you use the albacore!

Slow Cooker Taco Soup

Reviewed: Aug. 13, 2008
this was great but i did make some changes. i didn't add any water and i used frozen corn and 2 frozen chicken breasts instead of canned and beef. i also just added some chili powder, cumin, brown sugar, minced garlic and a cube of beef bouillon instead of taco seasoning. i let it cook on low all day, then added a can of beer and turned it up to high for an hour. really good!

Asparagus, Feta and Couscous Salad

Reviewed: Jul. 18, 2008
this is really delicious. i halved the amount of the couscous but keep the remaining ingredients the same. however, i used about 3T of parmesan cheese instead of feta and it is great! i am serving this with pan seared red snapper from this site for dinner!

Chocolate Chip Orange Zucchini Bread

Reviewed: Jul. 2, 2008
these are great! i also used half splenda and half brown sugar. i also left out the nuts, my bf hates them! i made this into muffins and they are superb. i made an orange glaze as well, but i think this would be great without it.. it gets a little too sweet with the glaze.

Restaurant Style Chicken Nachos

Reviewed: Jun. 2, 2008
this was delicious! i too used the canned chicken, but i used 2 cans and it was a lot of chicken which was perfect for us. i also did not have any green onions, so i just yellow. i also love lots of onions on my nachos, so i used a whole chopped large onion in place of the tomatos. these were really good... even leftover!

Filet Mignon with Rich Balsamic Glaze

Reviewed: May 13, 2008
this is great! I didn't have any red wine in the house, so i used some marsala cooking wine instead. i also cooked the steaks for a little longer. The sauce never really became a glaze, but it may be because of the cooking wine. We used the sauce to dip the steaks in because it was so good!

these are absolutely great! they are super simple, too. my bf wasn't sure when he saw all the ingredients laid out on the counter, but he couldn't stop eating these when they were done. after his first bite he said, "Wow, these taste like they should look colorful!" well, whatever that means, these were really good!
