Chocolate Brittle Surprise

So easy and so delicious! Part of me wishes I had never found this recipe because it's too good! I can't stop eating it! Watch out 'cause this stuff is addictive.

Portobello Penne Pasta Casserole

I really liked this. If you don't like spinach and mushrooms, you may not care for it. I used a combination of evaporated and skim milk and it turned out creamy and delicious. I used whole wheat pasta (which I'm not a huge fan of) and it still tasted great. Like some other reviewers, I wasn't sure about the soy sauce but I really think it brings out the meatiness of the mushrooms - don't leave it out. Delicious!

Hasselback Potatoes

I really enjoyed these. Slicing them is a bit tricky. I love the combination of the crispy/cheesy potato skin and the warm, soft insides. I used a higher quality parmesan and they turned out great!

Soft Whole Wheat Sugar Cookies

These are surprisingly good. I got about 36 cookies out of this recipe. Used butter instead of shortening. These are excellent with a chai latte. I think I will definitely make these again.

Rosemary Ranch Chicken Kabobs

This is our new favorite go-to dinner. The flavor is outstanding and the chicken turns out moist and tender every time. I don't even like ranch dressing but I love this recipe. Awesome!!

Slow Cooker Barbecue Ribs

My first attempt at cooking ribs at home and they were excellent. These blow away any ribs I've had a restaurant. I followed some of the suggestions and used KC Masterpiece in the sauce. I used a 2.5 lb rack of ribs from Wal-Mart and they only needed about 4-5 hours (on low) in the crock pot. Delicious!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Having made tons of chocolate chip cookies in my life, I was skeptical about these. I'm a believer! I can't describe how delicious they tasted warm out of the oven. Plus they really do look like they came from a bakery! I have never posted a review before but these were so great that I had to share my opinion. I got about 15 big cookies from this recipe. I used 1 stick of salted butter and about 3 TB unsalted (because that's all I had) and they were still excellent. (Also, keep in mind that 3/4 cup butter is NOT 3/4 of a stick - it is 1.5 sticks.)
