Spicy Baked Sweet Potato Fries

These are really good! I used salt, pepper, a sprinkle of cayanne, and garlic powder. Ketchup cooled down the spice (I'm a wimp), and the hubby loved them. Nice to add something healthy to a hamburger dinner.

These are the best! I use craisins instead of raisins. These are perfect for a breakfast on-the-go, and good to get everyone eating something heathy to start their day.

Easy Pavlova

This was sooo good. I had never even heard of a Pavlova before, but am very glad I tried it... it was light and fluffy, just as I'd imagined. I was afraid that it would only be good the day it was made, but after refrigerating (whipped cream and all) it still tasted fantastic, it was still crispy! In fact, my husband liked it better. I did reduce the sugar to 1 cup, and very glad I did.

Spicy Peach-Glazed Pork Chops

I just found my new favorite pork chop recipe! This is a must try if your trying to switch up a regular chop. I used ketchup, chilli powder, and some crushed red pepper instead of chilli paste. Thank you!

Chicken Cordon Bleu II

This was great. Very different than I had done Cordon Bleu's in the past, but I will definitely be trying this again. I had a little trouble with the floor mixture, so I'll probably be coating the chicken in egg first next time. The wine sauce is excellent!

BBQ Glazed Homemade Meatballs

This sauce is fantastic! I was going to make the meatballs too, but ran out of time and had to use frozen ones instead, but I imagine that the real ones would make this only get better. I also used worchestershire sauce instead of smoke flavoring. No need to look any further for a meatball recipe! A definite crowd pleaser.

Tomato Chicken Parmesan

Fantastic dinner! Pounding the chicken is a must, and leaves them sooo tender. I also halved the parm mixture, and it was plenty. Also added garlic and onion powder, which I do to most dinners. Everyone was very impressed, including me! Thanks.

Downeast Maine Pumpkin Bread

As suggested, I used 1/2 cup butter; 1/4 cup oil; 1/4 c. applesauce and 1 c. brown sugar with 2 cups of white sugar. This was great! The recipe is definitely large enough to share, it makes 12 (or even 18) muffins and I put what's left in a loaf pan. Makes a great breakfast, on the go.

Peanut Crunch Cake

This was great, but verrry rich. Be sure to have some milk handy. I made two layers, and iced in between the layers and the outside with a store bought choc fudge icing. I left the top of the cake open to crumbley topping. My husband loves peanut butter, and he loved this cake.

This was fantastic! I prepared it the night before, and put it in the oven before we tailgated. There were no leftovers after the game, and there were only four of us! I boiled, then shredded the chicken.
