Chicken Fajita Pizza

Excellent! If you like fajitas, you will enjoy this. The only changes I made were mostly in quantity: I used extra salsa, cut the chicken in bite-size pieces, used a whole onion and pepper, and added some Mexican-blend cheese.

Danish Pastry Apple Bars

Very good. As did others, I had trouble working with the dough. My solution is to roll it out a bit then smoosh half the dough into the bottom of the pan, add the filling, and then place the rest of the flattened dough in pieces on top. It leaves a lot of "cracks" but I choose to view it as a more "rustic" look. Besides, this tastes so good, we're too busy gobbling it up to worry about how it looks!

Double Tomato Bruschetta

Eastern North Carolina Barbeque Sauce

Wow! Just like the barbeque we'd get when we'd visit my nana and grandaddy in Wilmington... I was afraid it would be too spicey, but no, it was perfect. Thank you so much!!!

Creme Brulee French Toast

Excellent. Didn't have French bread so I used regular bread that I tore up and dried a bit in a warm oven. Instead of liqueur I substituted 2 tablespoons of OJ concentrate but it was undetectable. Next time I'll try orange zest or extract.

Drip Beef Sandwiches

We really like this! Easy to make in a slow cooker. I like to spread horseradish on French bread, perhaps a few slices of munster cheese, layer on the beef, cut the sandwiches in 2-inch section,.... mmmmmmm.

Crab Quiche I

I've made quiche quite often and was hesitant to try this - it didn't seem to have enough eggs or fat content (where's the cream?). However I followed the recipe exactly and was delighted! I think I will use this as the base for future quiches.

Chicken Pesto Paninis

Nice and simple. My husband really liked it the way it was, but I thought it seemed to need a little something - sun-dried tomatoes, feta, roasted peppers? Didn't need to broil it because I used fresh Parmesan Focaccia Bread hot out of the oven. Yummmmmm

Very good, simple bread, especially for base of sandwich (Chicken Pesto Paninis comes to mind!). Didn't use lecithin. Made one 9" loaf. Oh, didn't sprinkle with parmesan since the pesto had plenty in it.

Most Excellent Sandwich

A most excellent sandwich indeed! After being on the road for several days of pizza and burgers, I wanted something healthy and simple. One bite and my digestive system sighed in relief! I followed the recipe exactly,pulling it out of the oven after 7 minutes (I was hungry). Simplicity at its best!

Chicken Riggies II

Having never heard of Chicken Riggies, I tried this recipe on faith. Outstanding! I followed it exactly (okay, I don't actually measure anything, but still...). There was more sauce than I expected, so I served it up in a bowl with a spoon. When I commented that I thought I would use less liquid next time, my husband said he liked it the way it was!

A great simple sandwich. I use turkey bacon and smash the avocado down to a paste. Also, I've substituted blue cheese dressing when out of ranch - both are great.

The Real Reuben

A great easy sandwich. As did others, I toasted the bread, then put buttered-side down on tray. Warmed cold ingredients in microwave. My kids have now discovered they like Reubens!

Paella I

I have to admit that I've never had paella, but we thought this was very good. Couldn't find the rice called for so used long grain white rice - took about 40 minutes to soften. Used canned clams, no squid, extra chicken, no mussels. Served 8 easily.

Dirt Cake II

This is a great fun dessert. It may not be the greatest culinary delight of your life, but it will earn you giggles from everyone. Make the night before so it is good and cold. I put the worms in before sprinkling the crumbs on top so it looked more like they were burrowing. I made this to delight the kids - the fact that it tastes great is an added bonus!!!
