Fennel Pork Chops

A hit with my family. A while after dinner, my husband looked up and reiterated, "I really liked that. I'd like to have that again." Wow! My son said, "Is there any more?" Of course, he's 18 and is always hungry! lol Took the lid off at the end and let the wine boil almost all the way so I had a thicker sauce to put on the pork.

Frozen Chocolate Pie

This is too easy to be so very good! I coated an Oreo crust with seedless raspberry jam before filling with chocolate mixture. Topped the whole thing with Cool Whip. Very yummy!!!

Balsamic Roasted Pork Loin

And the crowd goes wild! Everyone loved this. I used Montreal Steak Seasoning. When it was time to put it in the pan, I added sweet potatoes, carrots and onions, coating them in the marinade as well. When the pork was done, I put it on a plate, boosted the oven up to 450, and let the vegetables cook a while the port rested 10 minutes. A wonderful meal!

Roasted Pork Loin

Very good and simple. Used fresh rosemary. FYI unlike most herbs, fresh rosemary is very strong and so you use less than what is called for dry. I threw in some carrots, potatoes and onions into the covered pot as well, coating it with the same oil mix. The wine sauce at the end really was that extra special touch that made this dish stand out. I think that next time I'll add the wine to the pot and let it cook in it the whole time.

No Beans About It - Chili

5 stars for taste and simplicity! After 28 years of marriage, I just found out my husband doesn't like beans in his chili! Who knew? Not me! I found this recipe and it was a hit all around. Perfect blend of sweet and spicy. I used ground pork, and instead of red wine vinegar, substituted 1/8 cup each balsamic vinegar and Worcester sauce. Served with cheese and sour cream.

EAGLE BRAND® Peanut Butter Fudge

Quick, easy and delicous, made with ingredients on hand. How perfect is that? Made with chunky peanut butter (didn't measure, between 1/2 and 1 cup) and chocolate chips instead of white chocolate. Next time I'll pour into a 9x4 loaf pan for a thicker final product.

Black Bean Vegetable Soup

Great! Added an extra can of black beans (not pureed) to the soup, plus 1 cup of rice. The rice obviously took care of the excess liquid some complained about ~ mine was nice and thick. A dollop of sour cream in each bowl was an extra bonus. Surprisingly, my husband said it was good the way it was and didn't need meat! Wow!

Chicken Breasts with Balsamic Vinegar and Garlic

A suprisingly delicate flavor. The only change I made was skipping the flour, and that was just out of pure laziness. Served it over pasta. Mmmm. Next time I'll make a fresh loaf of bread to soak up all the yummy sauce.

Pork Chops with Cranberry Balsamic Sauce

This was great! Love recipes that call for ingrediants that I have or can substitute easily with what is on hand. I had a boneless pork loin that I sliced into chops. No lemon pepper so I seasoned with Montery Chicken Seasoning. Boullon instead of stock. Used the dried cherries and berries mix I recently bought at Sam's Club. Served over rice. Everyone liked this, even the 16-year-old male child!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

A very solid chili for a group, won't offend anyone. Those who want it spicier can add their own Tobasco sauce. I added garlic and a can of chili peppers, served over rice with cheese, sour cream and cilantro. I like my chili a little wetter, so used 2 cups of broth but I did not add the liquid from the black beans. For variety, I think I would add garbanzo beans, corn and chopped tomatoes. I will be making a few meals for over 100 people soon ~ I think this will be one of them!

Stuffed Pork Chops with Gorgonzola and Apple

Superb! Would do the finest resturant well. Used thick-cut boneless loin chops from Sam's Club. Based on recommendations, I used one medium sized apple per chop, added finely chopped walnuts to stuffing with a splash of balsamic vinegar, and browned chops in a pan before baking. I used the same pan for the sauce, giving it a lovely color. Only had white wine, no sherry, but it was just fine. Added leftover stuffing to sauce in the last minute. Served with mashed pototoes to soak up the lovely sauce.

Pollo Mediterranean

Lovely. Having no sour cream in the fridge, I substituted half and half. Also, I increased the sauce a bit because I served over bowtie pasta and, well, let's face it ~ you can never have enough sauce! I might ease back a tad on the salt next bime but my husband thought it was perfect as is. This tasted like something you would get in a fine resturant, but was so simple and made with ingredients I had on hand. Does life get better than this!?!

Eggplant Sandwiches

Wonderful! With a garden producing eggplant faster than I can use it, I'm always looking for recipes. This is a keeper. To prevent sogginess, I sliced the eggplant, layed it on a paper towel, lightly salted, and topped with another towel. This pulls out the excess moisture. Thirty minutes later, I just rinsed and dried the slices, then proceeded with the recipe. I didn't have fresh tomatoes, so I used a bit of spaghetti sauce and served on regular toasted bread. My husband and teenage son both raved about this meal.

Spanish-Style Chicken and Sausage

A hit with the family. Tastes a lot like jambalaya. Had to substitute for ingrediants on hand: used hot instead of sweet sausage, eggplant instead of peas (adding with onion), canned tomatoes instead of fresh (added juice as well), brown rice that I cooked separately (used about 1 cup of chicken broth in dish, added rice at end and let it sit in pan for about 10 minutes). Very good and easy.
