Fluffy French Toast

I've been making French toast for decades, but this recipe took it up a level. Definitely gave the bread a fluffier texture. My husband kept going on and on about it. :)

RWOP Finalist: Mounds of Joy Whipped Pie

Oh gosh, this was a hit, both in appearance and taste! Rather than using chocolate ice cream topping, I made a simple ganache by pouring 1 cup of simmering cream over 1 cup of chocolate chips, stirring until smooth, and cooling in refrigerator. I like Almond Joys, so between each layer, I poured not only the chocolate ganache, but some chopped almonds and some of the toasted coconut. I topped the whole thing with more chocolate, almonds and coconut as well (I've posted a photo). It was delicious, but even better the next day, served frozen. I think that next time, however, I will make this in a 9x13 pan - the pie was mile-high and difficult to slice in small enough pieces as it is extremely rich. We got 12 slices out of the pie; I'm sure that we would get 16 out of a 9x13 pan.

Lemon-Herb Turkey

A perfect change of pace! The only change I made was to mix the oil with the herbs before spreading. The citrus added a brightness without being overwhelming. Cooked up lovely in my Nu-Wave oven. Thank you so much. :)

Puerto Rican Pork Roast

I had to force myself to put the pork away before I finished off a eight-pound roast on my own! This is simply wonderful! I followed the recipe exactly except that I added 1 tablespoon of apple cider vinegar to the paste. Took 2 1/2 hours to cook an 8-pound roast in my Nu-Wave Oven. Thank you, Kenny, for this great recipe!

Lasagna Alfredo Roll Ups

Love this!!! So much easier than regular lasagna, with a lovely presentation. I think it might be charming with the rolls standing on end as well (would require a toothpick or two). Prefer it with fresh spinach sauteed quickly with garlic. Great as is or with a tomato sauce on the bottom, Alfredo on top. This, my friends, is a keeper!

Pig Pickin' Cake

A great summer cake. My mother's recipe is exactly the same except calls for 1/2 cup vegetable oil. Be sure to not drain the oranges, but DO drain the pineapple well.

Chocolate Velvet Ice Cream

Super! Used half and half instead of heavy cream; didn't seem to detract from the flavor at all. Chopped up Butterfingers instead of chocolate chips. This recipe will clearly stand on its own or support any additions (I'm going to add chopped brownies next time!)

Pork Medallions Alfredo

We really liked this! Very simple. I used Balsamic Vinegar instead of the salad dressing. Didn't have Herb and Garlic Cream Cheese so instead used about 6 oz of regular cream cheese, and then added basil, rosemary, oregano, thyme, marjoram and garlic. Served over pasta.

Fennel Pork Chops

A hit with my family. A while after dinner, my husband looked up and reiterated, "I really liked that. I'd like to have that again." Wow! My son said, "Is there any more?" Of course, he's 18 and is always hungry! lol Took the lid off at the end and let the wine boil almost all the way so I had a thicker sauce to put on the pork.

Frozen Chocolate Pie

This is too easy to be so very good! I coated an Oreo crust with seedless raspberry jam before filling with chocolate mixture. Topped the whole thing with Cool Whip. Very yummy!!!
