Healthy Banana Cookies

Reviewed: Jun. 5, 2006
These went over well at a bake sale, marked "SUGAR FREE". They're more like granola bars than cookies. I used raisins instead of dates. Next time I'll add a generous dash of cinnamon, too.

Ham and Cheese Salad

Reviewed: Dec. 17, 2004
I used this to make finger sandwiches for a club meeting, and everyone seemed to enjoy them. I really liked the combination of flavors. I left out the celery because I didn't have any on hand. This was my first attempt at making homemade ham salad, and I'll definitely use this recipe again.

Tortilla Rollups IV

Reviewed: Aug. 8, 2004
These are the best tortilla roll-ups I've tried! I used to make a version with herbed cream cheese and olives, but I liked these with the salsa much better. I added slice ham to some of them, and we ate them whole as "sandwiches" for lunch the next day. Thanks for sharing this great recipe!

Hamburger Cookies

Reviewed: Jul. 2, 2004
These are cute, and quick to throw together. One person in my house hates coconut, so instead I used a squiggle of green frosting around the outside edges of the "hamburger" before I added the top "bun". I can't say these are the best tasting cookies I've ever made, but it is a fun idea.

Incredibly Easy Chicken and Noodles

Reviewed: Jun. 25, 2004
This recipe was just what I was craving. I used my homemade creamed soup substitute and non-frozen Amish "homemade" noodles from the deli, and it turned out great. Thanks for sharing this recipe- it's a keeper!

Hamburgers and Ketchup Gravy

Reviewed: Jun. 14, 2004
My husband, the ketchup lover, enjoyed this dinner- I thought it was just "OK". I accidentally left the ketchup out of the meatballs, but it still turned out fine. I served it with mashed potatoes for a good, plain, comfort-food kind of meal. I'll probably be make this again.

Pepper Steak Packet

Reviewed: May 31, 2004
This was delicious! I baked it in the oven for about 35-40 minutes on 425. I added a few shakes of spicy Mrs Dash, and used a frozen bag of "stir fry mix" that had three kinds of peppers plus onions. This will definitely be on our regular menu rotation- thanks for sharing!

Wisconsin Cheese Soup II

Reviewed: Apr. 10, 2004
This was wonderful~ a nice creamy, filling soup. I didn't have the fresh veggies the recipe called for, so I pureed a bag of broccoli/carrot mix in my food processor and used it instead. My soup was pretty thick~ (maybe because I changed the veggies?) more like a cheese sauce~ so I added about two cups of chicken broth and then it came out perfectly. This recipe is definitely a keeper- thanks for sharing!

Grilled Peanut Butter and Jelly Sandwich

Reviewed: Apr. 5, 2004
I never would have thought of grilling my peanut butter sandwich, but I'm glad I saw this recipe~ what a treat! I made mine on wheat bread with honey instead of jelly, and it was delicious. One hint: don't use fat-free margarine, as the bread won't get nice and golden crisp. Regular margarine or butter works better.

Salsa Biscuit Chicken

Reviewed: Apr. 5, 2004
We enjoyed these for lunch. I flattened Grands biscuits with my rolling pin and didn't have any trouble~ next time, I'll probably divide them in half like another reviewer suggested. I did have nearly 1/3 of the filling left, but it worked well over nacho chips.

Slow Cooker Chicken Creole

Yum! I used jalapenos slices from a jar and also added some additional spices~ red & black pepper, spicy Mrs Dash, and some haberno seasoning. The whole house smelled delicious!

Easy Chocolaty Brownies

Reviewed: Feb. 2, 2004
I only had vanilla pudding in the house, but it worked just fine~ I added a little bit of cocoa powder, too, to make up for the vanilla flavor, but I don't think it would have mattered if I hadn't. These came out to be very moist, fudgy brownies~ I can't believe there's no oil or eggs in them. Thanks for sharing this recipe!

Daddy's Fried Corn and Onions

Reviewed: Jan. 26, 2004
This was pretty good as a side dish to steak. I also threw in some chopped green pepper & seasoned with red/black pepper, which gave it a nice flavor. I had to use frozen corn, but I'm sure the fresh tastes better and stays more crisp.

Buffalo Chicken Rolls

Reviewed: Nov. 30, 2003
These were good for a different way to eat our favorite wing sauce. I used chicken tenders (3-4 per person) and mozzarella cheese as that's what I had in the house. The breasts would definitely be easier to work with, but I'm sure the flavor was basically the same. Overall, I wasn't really excited by the recipe but it wasn't bad, either, so I'll give it three stars.

Owen's Mozzarella and Tomato Salad

Reviewed: Aug. 23, 2003
To use what I had on hand (which right now is a million cherry tomatoes from the garden!)I made this with shredded cheese and cherry tomatoes. I tossed it all together and served it in bowls. This is a great combination of flavors, and I plan to make it again this coming weekend for company!

Texas Ranch Chicken

Reviewed: Aug. 23, 2003
I cut this recipe down to serve two- I did this with chicken tenders in a 9x9" casserole. I also topped the chicken with bread crumbs based on another review. It was really good- it had a great creamy texture. I served it with pasta, although next time I might make some crusty bread with it. Thanks for sharing this recipe!

Chocolate Chip Cheese Ball

This was wonderful! I took it to a potluck and people I'd never met before were asking me for the recipe. I rolled mine in graham cracker crumbs & more chocolate chip instead of nuts and that worked beautifully.

Way Easy Pizza Sauce/Bread Stick Dip

Reviewed: Aug. 8, 2003
This was pretty good on my Bisquick pizza crust. I added several dashes of onion salt, and used garlic pepper since I didn't have any garlic salt. I think I'll try adding some other seasonings, but overall, this recipe is a keeper.

Burrito Pie

Reviewed: Jul. 26, 2003
My husband and I enjoyed this dish. I substituted a can of Jalapeno Relish for the taco sauce, which brought the heat level up quite a bit. I also used more cheese (shredded cheddar since that's what I had on hand) since I am a cheese lover. I used pre-browned ground beef from my freezer, which meant that prep time was minimal-- I just simmered the ingredients about 10-12 minutes and then layered them in the casserole dish.

Barbecue Beef Cups

Reviewed: Jul. 21, 2003
I used sloppy joe sauce as another reviewer suggested, and while I thought they were just "ok", my husband and his grandmother loved them. I'd like to try this using pizza sauce and maybe adding in some chopped peppers & onions. I think there are many possibilities with this recipe!
