Poppy Seed Bundt Cake III

Wonderfully moist, perfect light and tender texture, but not overwhelmingly flavorful when using vanilla extract (2 teaspoons). I was out of almond and I will definitely do the almond next time bc the vanilla was rather flavorless. Used 2 loaf pans and baked 35 minutes - perfectly cooked.

Chewy Chocolate Chip Oatmeal Cookies

Delicious! Turned out thick and chewy! Added 1/2 teaspoon baking powder and refrigerated the dough over night - I think the chilled dough really kept them from spreading and thinning. A keeper!

Broccoli, Rice, Cheese, and Chicken Casserole

Very good - quick and easy for weeknight dinner. Used 3 rotisserie chicken breasts (from 2 rotisserie chickens), 2 cups cooked rice from chinese restaurant leftovers, 98% fat free soups, 2% velveeta, skim milk, broccoli florets, and omitted the butter. Great consistency, very rich despite no butter - can't imagine needing it. I'm guessing leftovers will be even tastier. Hearty and makes a lot!

Chile Garlic BBQ Salmon

I actually hate salmon but love the health benefits so I usually try to choke it down as quickly as possible. Not necessary with this recipe! It masked the "salmony" flavor and allowed me to actually enjoy eating salmon like a normal person!

A huge hit at my summer party with guys and girls alike. Followed recipe to the letter and it was perfect! Not overly sweet (I was worried about that as an almost exclusively red wine drinker.)

Banana Banana Bread

I've been using this recipe for years to use the bananas that grow on our trees in Florida - it is the best I've tried and I have tried plenty as it is one of my favorite treats. Seems to work with as few as 3 bananas if they are super ripe, but I usually use 6 regular over-ripe bananas and chopped toasted pecans - perfection!
