Creamiest Rice Pudding

My dad loves rice pudding so I thought I would give this a try but I only had 2 eggs to add to the cooked rice/milk mixture. It was just after the holidays so I used the 2 eggs plus 1/2 cup of leftover eggnog instead of the 3 eggs and 1/4 cup milk. Delicious!

Wow! I followed the recipe to the point of beating the cooled mixture and then I used a hand mixer set on medium for 5 minutes as suggested by other reviews. I thought it wouldn't set up but I put it in the fridge and it was perfect, so creamy! Thanks for the great recipe!

Ooey Gooey Breakfast Rolls

Wow! Easy and great! Couldn't find cook and serve butterscotch pudding, so used a 3 ounce package of cook and serve vanilla pudding instead. Turned out wonderfully. Thanks for the recipe!

Slow Cooker Tomato Chicken

This recipe is a great one if you use bone in chicken thighs instead of chicken breasts. I have a 6 quart slow cooker and I used 12 chicken thighs and quadrupled the sauce to go over them. Even after 12 hours on low, the thighs were melt-in-your-mouth moist!

Sausage Mushroom Manicotti

This was pretty good, but I did make a couple of changes. First I stuffed the shells uncooked, then I made my own cheese sauce (Stir 1/2 cup flour into 1/2 cup melted butter/margarine, whisk in 3 cups beef broth and bring to a boil. Lower the heat and then add 2 cups shredded cheddar and stir until melted). I coated the bottom of the dish with about 1/2 cup of sauce, put in the manicotti and poured the rest over then covered with foil and baked for 1 hour. Came out great!

Southern Candied Sweet Potatoes

The best! My husband loves sweet potatoes, but I usually gave him the canned type. I'll never go back to canned again! Like the others, I used 1/2 white sugar and 1/2 brown sugar. Will use this recipe again and again!

Mexican Wedding Cakes II

My mother and I used to make these all the time when I was little, but we did one thing differently. We cooled the baked cookies on the cookie sheet for about 5 minutes and then rolled them in the powdered sugar carefully (they are very fragile and will crumble if handled too roughly). Then we let them cool completely on a rack and rolled them in sugar again after they were cooled. More sugar stuck to the cookies that way and they were sweeter than if we had only rolled them in sugar once.

Chicken and Bacon Shish Kabobs

This is great! I used 1 pound of boneless, skinless chicken thighs instead of the breasts and marinated 24 hours. The marinade flavor was not too strong and the chicken turned out wonderfully. Thanks for the great recipe!

Awesome Eggplant Rollatine

Great recipe to hide spinach from picky eaters! My husband can't stand spinach but loves this recipe. To make it easier, instead of rolling I ooured 1/3 of the pasta sauce in the pan and layered 1/2 of the fried eggplant slices on top of the sauce, topped with all of the cheese/spinach mixture, put on the other 1/2 of the eggpland and poured on the rest of the sauce. Much easier and still good!

Baked Soy Lemon Chops

This is a great recipe! I read the other reviews that said the chops turned out too salty so I tried doubling the lemon juice and I cooked the chops in a skillet instead of baking them. It worked! My family loves this and I'll be making it again. Thanks!
