Nutty Coconut Fish

Reviewed: Apr. 4, 2012
Both of my boys have braces so I substituted the nuts with panko crumbs - no other changes made. Used on catfish. If I were able to, I'd give it ten stars. Deeeelicious. Thanks Missybic!

Spicy Honey-Roasted Chicken

Reviewed: Apr. 3, 2012
After reading the reviews, I made a few tweaks. I used chicken quarters and marinated in the honey mixture overnight. Cut up some potatoes and an onion and threw them in a 9x13 pan and placed the chicken on top. I made a fresh batch of the honey mixture (halved) and brushed on the tops. Drizzled with butter and placed in the oven at 350 covered with foil. After 25 minutes, I removed the foil, flipped the chicken and returned to the oven for another 25 minutes. Took it out of the oven and replaced the foil and rest 10 minutes. My boys LOVED it. They commented on the potatoes being flavorful and the chicken was moist. Strong taste of cumin - I'm debating on whether to cut back or not. This recipe is a keeper just for the simplicity.

Creme Brulee French Toast

Reviewed: Feb. 3, 2009
I used challah (egg) bread for this recipe as a personal preference (cut 6 slices, 1" thick). Per other reviews, I also cut down on the sugar a bit, used 4 eggs and left the crust on. The crust was crispy on some slices, moist on others. I will either use 5 eggs next time or cut off the crust. I loved the flavor and ease of the recipe. Will be added to breakfast rotation.

Slow Cooker Thanksgiving Turkey

Reviewed: Dec. 1, 2008
I made this for my small family on Thanksgiving with a 3 lb. boneless breast. Only took 6 hours and could have been less. My boyfriend raved about it so much, he bought another breast that I am cooking today. Glancing at previous reviews, I omitted the Worch. and being a garlic freak, I really lathered on the garlic pepper and poultry seasoning. Threw in the packet of gravy included with the turkey; whipped up a packet of gravy I had on hand instead of canned; added a cup of chicken broth and turned breast over halfway through cooking. Prayed that all this would avoid a dry turkey. The result - a VERY moist and delicious turkey. BF raved about the extra kick it had. Is a keeper, especially for being soo easy!!

Spaghetti Sauce II

Reviewed: Oct. 29, 2008
Only change I made was cutting up the sausage before adding it and blending one of the cans of tomato in the blender - I don't like the huge chunks. The taste was great, but the sauce was a little runny, probably from the blender action. Maybe i'll put more paste in it next time. Will keep this recipe though.

Pumpkin Pie Cake I

Reviewed: Oct. 29, 2008
I made this for my family and let my mother tried it - now I have to make it for her church treat night! Only change was to mix the butter and cake together before I put it on top. Wonderful twist for pumkin!

Jay's Jerk Chicken

Reviewed: Oct. 13, 2008
Delicious! I pound the breasts a little prior to marinating and double the spices - other than that , I don't need to change a thing. The chicken is so moist and full of flavor!

Super Grilled Salmon

Reviewed: Oct. 13, 2008
Followed directions to the T. There was a lot of sauce left over and my boys didn't even like the sauce. The marinated fish was good though. Might make again.

Spiced Cocoa Cupcakes

Reviewed: Oct. 6, 2008
Not wanting dry cupcakes, I added another egg, 1/4 C of applesauce and 1/4 C milk in addition to what was required. Substituted walnuts for the cranberries. This recipe is a keeper!

Tasty Green Beans

Reviewed: Oct. 6, 2008
Made this tonight and my boyfriend raved about it! I followed the suggestions of other reviewers and halved the reduced sodium soy sauce. Still tasted salty to me - but if you really think about it, salt is the first ingredient listed on the boullion, so common sense would say you practically toss in 2 Tbsp of salt right there.
