Light Chicken Piccata

Thought it was pretty tasty. I usually make Giada's recipe that has way more butter. This one made me feel much more virtuous. I browned the chicken quickly then simmered it in the sauce. I did not have vermouth, so I used chicken stock from a bouillon cube. I do not mind the lemon flavor, in fact, we love it! We served it alongside a steamed rice with sauteed mushrooms, spinach, chicken stock, and lemon mixed in. Yum!

Pineapple Pork Chops

Cooked the chops well, they were pretty juicy, but the sauce was kinda bland. Perhaps some spicy with the sweet next time.

Dilly Potato Salad

Good, basic recipe. I used russet instead of red potatoes, because that's what I had. I added some celery and just a dash or two of curry powder for a bit more twist. Yum!

Cream Cheese Frosting II

Very easy, very tangy, and just sweet enough for my taste - I don't really like buttercream, etc, so this is my kind of frosting! Just delicious.

I think they could have been a tad moister, but they were a hit! I also used the Cream Cheese Frosting II by Janni which was FANTASTIC. Delicious and festive.

Holiday Pumpkin Bread

I skipped the raisins and nuts (not a huge fan of in cakes, etc) and it was still delicious. Just threw everything into the Kitchen Aid and voila! Couldn't have been easier, and it came out perfect. Thank you!

World's Best Scones! From Scotland to the Savoy to the U.S.

Quick, easy recipe, thanks! Might just be my oven, but had to bake about 17 minutes. I used my Kitchen Aid to mix, and it worked great. Not too dense, and very tasty, thanks!

Spicy Cucumber Soup

Great ideas to spice up cucumber soup. I skipped the red pepper flakes and used fresh tomatillos and two fresh serrano chili peppers instead for the heat. I also included 3 very small russet potatoes and had chix broth, not veggie broth. Very tasty.

Banana Banana Bread

I have made this recipe several times and it is really delicious. I am pretty lazy and just throw everything into my KitchenAid, the wet ingredients followed by the combined dry ingredients in small batches. I like how the recipe is not super sweet and it always has a nice consistency - not too cake-ey, but not to dense either. Yum!

After-Thanksgiving Turkey Soup

Great soup recipe. I used a little heavy cream and a little nonfat milk instead of half and half. It needs a little more flavor; and maybe a little more acidity. Next time, I might add some lemon juice or lemon zest and some more herbs. But a great start for a great soup!

Laura's Quick Slow Cooker Turkey Chili

Good solid easy chili recipe. I used canned (undrained) tomatoes instead of soup; and I had no black beans but I used pinto, kidney, and garbanzo. The flavors were great. Might add a bit more liquid next time - but thanks for a great recipe!

The Best Rolled Sugar Cookies

The cookies came out delicious! Definitely be sure to chill properly before rolling out the dough. I had some trouble getting them to stay together, but I may have been rolling too thin. They cooked up great - not underdone, not brown or crispy and are a great standard recipe for holiday cookie decorating!

Brussels Sprouts with Pecans

I have made this recipe several times and just love it. Most recently, I made it on Thanksgiving. Sometimes when I make it, I feel it needs some acid to balance the bitterness of the brussel sprouts, but other than that, it is a great way to prep one of my favorite veggies.

Turkey Pot Pie

My husband and I have found a new post-Thanksgiving tradition. We used this recipe to make individual pot pies in several au gratin dishes we have. I used tarragon instead of parsley and veggie bouillon instead of chicken because of what I had on hand. DELICIOUS! We were really pleased with the way this came out. Definitely a keeper!

Onion Cheese Bread

I made this in a muffin tin rather than a loaf pan. The texture turned out nicely, and my husband said he liked them, although I thought they could have used a bit more flavor. Will definitely make them again, but may play around a bit with the recipe...thanks!
