About this Cook
Born again, wife/mom/rottie owner. Two boys, 23 and 11. Boise State Univ employee & student.
My favorite things to cook
Wild harvest Idaho game, fish & wild fruit preserves;huckleberries & blackberries. Like to bake bread, seldom have time.
My favorite family cooking traditions
Smoked turkey, steak-on-a-stick, no-flour peanutbutter cookies. Gramma Jean's fruit salad. Mayo-basted baked salmon, soy/garlic almonds, Shane's amazing naked barbecued chicken thighs, pineapple-baked beans, Angel biscuits. sourdough pancakes. Clam stuffed mushrooms, green cornbread & elk chili. Guacamole & slow cooker roasted chicken.
My cooking triumphs
Hot smoker pork ribs and turkey. Anything that makes people change their minds about a food prejudice: discover a new deliciousness.
My cooking tragedies
Bread that won't rise. burned peas, over-brined pork loin. ricekrispy treats that never set up (ate them anyway, messy but wicked-good) making chocolate truffles with a five-year old helper (messy but wicked-good.)

Baked Coconut Shrimp
Sound cooking concept, too salty. I found finely milled unsweetened coconut at Winco bulk food section. 'Combined it with regular sweetened flake coconut, which balanced the coating better, I thought. Next time I'll omit the 1 t salt, turn the heat up to 425. Overall worthwhile, shrimp stay moist, nice peppery bite, moderately crunchy.

Peanut Butter Chip Chocolate Cookies
Good (I believe) as written. As always I tinkered w/original. Sub 1/2 C oatmeal flour for 1/2 of ap flour, added 1/2 c peanuts, increased salt to 3/4 t, increased vanilla to 1T. Dirtbiking boys and dads approved. I agree with other positive reviewers that the basic chocolate dough is very well balanced and suitable to infinite variation.

Balsamic Glazed Carrots
This is awesome, although I agree with many other reviewers; either pre-cook the carrots or be prepared have to cook them in the oil a lot longer than 10 minutes. I like them parboiled in a 1/4 c of water, with 1t ea dried parsley and rosemary. The herbs stick when the carrots are drained and compliment the flavors of balsamic vinegar and sugar. Shallots sauteed in the olive oil added before that sugar, are nice too, if you have them.
