Chicken Marsala

So good, but too sweet. 1. Flour, salt, pepper (both cayenne and black), oregano, and salt. Coat the chicken and then cook in butter and oil. 2. Remove chicken and put aside. Cook the mushrooms in the same pan until soft and brown. (next time I'm going to remove after this step, the mushrooms soaked up all of the wine and they tasted like alcohol) 3. Make the sauce. I doubled the sauce and I also added whipping cream, cayenne pepper, Italian seasoning, and garlic powder. 4. Add chicken and mushrooms back into the sauce and cook for 10 minutes covered or until your sauce thickens to your liking. I served over angel hair pasta and topped with parmesan cheese. I've been told adding a capful of vinegar will cut down on the sweetness. Any other suggestions would be great.

Crawfish Etouffee Like Maw-Maw Used to Make

This was so yummy! I listened to the suggestions and added a few things like bay leafs, paprika, lots of cayenne, garlic powder (in addition to the sliced garlic), chicken broth instead of water and a little bit of lawrey's season salt. My roommate said it was soooo good!

Chicken Pot Pie IX

I made this for the first time and all my guests loved it there was only enough left over for lunch for me today so I see that as a success! I didn't follow the directions to a T but I did put egg on the bottom and tops of the pie crust, and I made more sauce next time I'll be more careful with measuring out the milk and chicken stock because I did not measure it really and I want a more creamer sauce. I will make this again!
