Vegetarian Shepherd's Pie

Reviewed: Mar. 22, 2009
This turned out to be fantastic! I used veggie stock instead of water, added zuccini & mushrooms, used fresh tomatoes instead of canned, and added a couple more herbs like oregano. This was so delicious, I will definately make it again.

Vegetarian Jambalaya

Reviewed: Mar. 26, 2008
This was delicious! I did what others recommended and upped the amount of each of the spices. I also added vegetarian italian sausage and used vegetable stock instead of water (and used more than recommended). My boyfriend is a chef, so it's intimidating to cook for him, but he loved this!

Yummy Sweet Potato Casserole

Reviewed: Dec. 27, 2012
I did what other reviewers did and substituted evaporated milk for the regular, baked the sweet potatoes instead, and added a pinch of nutmeg and cinnamon to mixture. I also think it's better when you cut down on the sugar a bit. I've brought this to Thanksgiving and Christmas dinner for the past 2 years now, and everyone loves it!!

Fabulous Zucchini Grinders

Reviewed: Dec. 27, 2012
The first time I made these, they were alright, but not amazing. The second time, I amped them up a bit, and they were delicious. I sauteed chopped onion and garlic and sliced mushrooms with the zucchini and added extra red pepper flakes (I like spicy). I also added dried oregano and basil upon adding the marinara. Like other reviewers, I toasted the sandwich rolls under the broiler for a few minutes to keep the bread from getting soggy. With these additions,I really enjoyed this and will definitely make it again!
