Cha Cha's White Chicken Chili

Really good! I used chicken leg quarters, which I cooked in the slow cooker with about 1/2 cup of water. Then used the juice in the slow cooker as my chicken broth. I also used extra green chilis instead of jalepenos because I was making this for my whole family, includng children. All of us, even the kids, ages 2, 5 & 7, ate this & liked it. I also cut back on the spices, using less cumin & cayenne. We added the cheese to our individual bowls, along with sour cream & crushed tortilla chips.

Honey Wheat Bread I

This bread is delicious. I have made it a few times now and gotten the best results with these changes: I doubled the recipe, using 10 cups freshly milled flour, used 3 tsp yeast, buttter instead of shortening, skim milk instead of evaporated. I added a tsp of gluten, and added the salt during kneading. I also added flax seed & ground flax during kneading. This made two large loaves. I may not have baked it long enough (40 min), so may need to increase the baking time if I find it not done in the middle. Otherwise, turned out perfect.

Anniversary Chicken I

Simple Whole Wheat Bread

This was my second time making bread from scratch and it worked perfectly! I've just started grinding my own grains to make healthy bread & decided to try this recipe. I was a little worried because I wasn't sure what "bread flour" is considered. I ground 2 cups of hard red, 2 cups of hard white and a little more than 1 cup of Ezekiel blend for a total of 8 cups of flour. I have a large package of yeast so used 1 round T. Then I mixed it in my Kitchenaid mixer and when it was time to knead, I used my dough hook vs doing it by hand. I also added some flax seeds during kneading. Each rise was around 30 min. It came out in perfect loaves & holds together beautifully, will make a great sandwich bread.

Chocolate Trifle

Delish! I made this for a ladies night at my house & was very dissppointed to have so little left over!!! Everyone loved it! This is also a no fail recipe, it would be really difficult to mess this up.

Mini Cheesecakes I

I made these today and took advice of some of the reviewers, changed the crust to graham cracker crust but am wishing I didn't. The crust completely sticks to the paper when you pull it off, so you mostly get just the cheesecake. I will definately try these again with the Nilla Wafers.

Tortellini Salad

This was just okay. The artichokes seemed to taste a little too strong and the salad dried up a lot . . . had to add extra oil to the leftovers. I also added some parmesan cheese to help with the flavor. Would probably not make this again.

Baked Kale Chips

In an attempt to find more healthy snacks for my family I decided to give these a try. I can't imagine how people say these taste like potato chips...they had an aftertaste & tasted nothing like potato chips. My two year old kept trying to eat them, I guess she thinks anything called a "chip" must be good. I'm not sure if it was the texture or taste, no matter, we will not be trying these again.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Delicious! I used chipolte chili powder, and cut back a little so it wouldn't be too spicy. We loved it. Also, used Polaner AllFruit Apricot & Sweet Baby Rays for the sauce. I did not add the lime juice & ran out of garlic powder after making the rub, so did not have those in the glaze, but it was still very good.

Baby Back Ribs

My husband and I have tried several times recently to make "fall off the bone" tender ribs & have failed up until now! These were excellent! I did not have time to marinate them, but read the reviews & used Cathy M.'s rub, then slathered with Sweet Baby Rays. I then put them in the oven at 300 for 2.25 hours. I let them sit out for about 45 min - 1 hour, then put them on the grill, turning & basting with sauce every 10 min or so for 30- 45 minutes. YUM! They were falling off the bone tender & crunchy on the outside from grilling, best ribs we have had in a looooonnnng time!

Parmesan Sage Pork Chops

I've made these twice now. The first time they didn't turn out but I thought it was my fault because I used thick boneless chops. They were also bland & had way too much breading left over. So, I decided to try them again. The second time I used much less breading and added spices to help the flavor, but they were just okay, even with the modifications.

Chicken Breasts With Herb Basting Sauce

I'm not sure what happened, but this was not good. I used boneless chicken breasts and baked at 375 for about 35 minutes (covered for the first 25 minutes). They were tough and just not good.

Basic Ham and Bean Soup

This turned out really good, however I did make some changes. I soaked the beans for about 7 hours, then put everything in the crockpot on high. I did not have a ham hock, so added 1 c extra ham. I used 4 c chicken broth & 4 c water, added extra garlic & also did not have any celery. After about 3 hours on high the beans were still crunchy & the soup was very bland. So I added some spices, garlic powder, seasoned salt, paprika & red pepper and put it in the fridge overnight. Then put on low the next day for 6-7 hours.

Cookies 'n' Creme Fudge

Easy & delicious. I made this with white candy coating. After a couple of days in the fridge, the texture is not the same, next time will probably use the white chocolate baking squares. Either way, still yummy!

Robbi's M&M Cookies

I doubled this recipe because am sending some to school tomorrow with my daughter and wanted to have some for us to keep at home. I made big cookies, about 3.5 inch round (about a heaping tablespoon). This made a little over 5 dozen. I also added a few mini choc chips. They turned out really well, however are a little flat. I did use 1/2 butter flavored shortening and 1/2 unsalted butter, so maybe that is why, but they are still delicious.

Baked Sweet Potatoes

I follwed the recipe and tried these about 15 minutes before they were done, was not overly impressed. It may just be that I'm used to my sweet potatoes being "sweet". So I added about 1.5 T of brown sugar, for 4 large potatoes, and they turned out very good. I took one reviewer's advice & turned the oven up to 450 for the last 10 min, but it did not make them crisp. I will still make these again with the addition of the brown sugar.
