Chicken Marsala

Reviewed: Oct. 22, 2013
Very easy and yummy. I used chicken thighs because that's what my family prefers. Also, didn't have Sherry so only used Marsala. This, I do not recommend. It was a bit too sweet. I doubled the sauce and it was perfect over pasta.

Almond-Raspberry Meringue Bars

Reviewed: May 14, 2013
Very simple to make! It was good but I would prefer it with less crust and more raspberry. The crust was more cake style and seemed to overtake the overall flavor.

Scones

Reviewed: Apr. 30, 2013
Excellent, quick and easy. Just what I like. They had a warm buttery taste. I didn't "roll" out the dough, just flattened with my hands. Each wedge is a very good size.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Apr. 30, 2013
As written I give this 4.5 stars. I wanted to try it exactly as shown first. There were suggested changes that really should be done. First, flouring the chicken is out. It definately made the finished product kinda mushy. I will use a white balsamic next time, as suggested because the color is a little off-putting. You will know when the balsamic has reduced. Do not keep cooking at this point or the sauce becomes a little goopy. I kept cooking because the time was not done. The sauce was wonderful and I will actually triple it the next time. This cooked up fast and was super yummy. I served it over rice pilaf.

Orange-Glazed Carrots

Reviewed: Mar. 9, 2012
My family did not like these at all. Way too sweet. I will say that the recipe is very easy, and the carrots cooked well. Just a matter of preference.

Best Spanish Rice

Reviewed: Feb. 22, 2012
Loved this! Rice was moist and very flavorful. Way too easy! One thing to note, check after about 15 minutes. Mine was out of liquid, but not yet done, so I added a little water fo finish out the time.

Sweet and Sour Meatloaf

Reviewed: Jan. 11, 2012
This was wonderful. Hubby doesn't like meatloaf texture, so after cooking just the meatloaf, I cut it into 1" slices and browned each side in a skillet. I then served the slices with the sauce poured over. A big hit in my home! It's also a good idea to double the sauce.

Raspberry Ribbons

Reviewed: Dec. 6, 2011
These are excellent, and super easy. They're going to look beautiful on the Christmas Cookie trays! One thing I found, when making the 1/2" indentation down the middle. I didn't know if this meant 1/2" wide, or 1/2" deep, so I did both. I recommend you be careful on how deep you make it. If this area doesn't have a thick enough cookie base left, it will be a weak spot in your finished cookie, which means prone to breaking. Otherwise, this is perfect the way it is.

Chocolate-Oat Toffee Bars

Reviewed: Dec. 6, 2011
Yummy! Hubby loves these and they were definately easy and fast to make. They've earned a spot on the Christmas cookie trays! A couple of tips. They are very hard to cut when very cold, so after cooling in the fridge, let sit out a little to make it easier. If you double the recipe, it will fit in a 9x13 and a loaf pan.

Maple Glazed Ribs

Reviewed: Aug. 26, 2011
I've been making these for years and am always asked for the recipe. When in a pinch, these changes will also work. - Sub regular syrup for the maple - Sub regular OJ for the concentrate - Thicken the sauce with some bbq sauce to cook on the grill

Parmesan Stuffed Crescents

Reviewed: Jul. 22, 2011
Super simple and full of flavor. I made these for the family and then for a large group. Everybody wanted seconds and there were none left over. Since this is my own little experiment, I was especially pleased by everyone raving over them.

Mom's Cucumbers

Reviewed: Jun. 24, 2011
Just the recipe I was looking for. Couldn't find celery seed, but it was still fine. I added a little more vinegar, and used sliced red onions, instead of chopped - just a personal preference thing.

"Better than in a restaurant!" That's exactly what my Hubby said and that's exactly correct. These are so easy to prepare and truly outstanding!

Ham and Potatoes Au Gratin

Reviewed: May 3, 2011
What a simple and yummy recipe! A couple of things to note: I used a heavily glazed honey baked ham and didn't care for the sweetness it added. (Just something to think about.) Also, I was doubling the recipe, but didn't have enough milk, so just used a can of cheddar cheese soup and that worked well. Thanks for the recipe!

Cod with Italian Crumb Topping

Reviewed: Jan. 31, 2011
Please notice that the description clearly states this is a "low-fat" recipe. Therefore, substituting mayo for the egg white truly changes an important factor here.

Marcia's Famous Sticky Buns

Reviewed: Dec. 6, 2010
These were very good, but as they cooled, the "goo" got hard and chewy. Not sure if it was supposed to do that or not. I followed the recipe exact except for using the cook type pudding as suggested. They tasted excellent, but just had to eat them fast.

Easy Herb Roasted Turkey

Reviewed: Nov. 28, 2010
Because Hubby doesn't eat skin, I put some of the olive oil/herb mixture between the skin and meat. It was SO moist and flavorful!!!! I did remove the cover with 1 hour left to assist browning. Everybody raved about how excellent this came out!

Cornbread and Sausage Stuffing

OUTSTANDING! The only suggestion is that knowing how people eat at a holiday, plan on this recipe serving less than the 24 stated. I doubled it and we served 10, with a reasonable amount of leftovers.

Monkey Bread I

Reviewed: Nov. 28, 2010
I've made this once as directed, and once at 1/3 recipe in a round cake pan. Both were excellent!!!!! Next time I will try putting some of the butter/brown sugar mixture in the middle, and the top, just to see how that turns out.

Chocolate Chip Toffee Bars

Reviewed: Sep. 27, 2010
These are absolutely fantastic and easy to make! Hubby took a spoonful from the pan, right out of the oven and couldn't wait for them to cool. So he spooned it into a bowl and ate it warm. (Would like to experiment with making in individual serving dishes and serving warm with vanilla ice cream.)
