Tiramisu Bowl

This was a tasty quick dessert. I used decaf instant coffee and made it VERY STRONG so that it could be tasted within the dessert. PERFECT!

Key Lime Cake III

D E L I C I O U S! It wouldn't have been any better unless it was also healthy. Guess you can't have everything. I used only 3 cups powdered sugar in the icing- plenty sweet! Any more and the frosting would have been less cream cheese and lime and more powdered sugar taste. I also added about 2 tsp lime zest to the frosting and another bit on top for garnish.

Slow-Cooker Tex-Mex Chicken

This is a good and easy dish, but my kids thought it was too spicy. I would make sure to use a mild salsa next time. Instead of the taco seasoning packet, I used Taco Seasoning I recipe from this site.

Tuna Macaroni Salad

This is a great basic recipe! I did not use sour cream because I had run out, but I just used mayo- reduced fat Hellman's that tasted great. I also used low fat Italian dressing which seasoned it perfectly so that I, who usually think everything needs extra salt and pepper, did not have to add any salt or pepper at all. I increased the tuna to 2 cans and added chopped black olives.

Fried Rice Restaurant Style

Pros: This recipe is very easy and makes use of some common ingredients you have on hand. It can also make use of leftover meats. I added leftover porkchops that I sliced and used frozen peas and carrots. Cons: There is not alot of flavor, but then again I have been known to like a stronger flavor. I suggest adding a tsp each of garlic powder, salt, and fresh ground black pepper. I also added a 5 spice blend I had on hand as well. I cooked as directed other than the additions to the ingredients I made. I will make this again, but who knows the combination I will make next time!

Maple Bacon Pancake

This is a great all in one breakfast that was a real kid-pleaser. I had to use about 1/3 c flour as I was a bit short on baking mix, and I used turkey bacon, and it was still great. I can see also how easy it would be to modify it to your family's preferences. Also, I used regular pancake syrup as it was what I had on hand. I will make this again!

Sweet Restaurant Slaw

Best slaw recipe. I used the amount of sugar in the recipe (other reviews said less sugar made the recipe not as good.) Another reviewer was correct that it seems quite dry but, after setting for 2+ hours in the refrigerator, it was perfectly creamy. I used minced onion and left out the poppy seeds. It was fantastic and was a hit at our party. They said it was better than any restaurant slaw they had had! I will keep this recipe.

Onion Roasted Sweet Potatoes

This was a great option instead of the southern sweet potatoes I'm used to with loads of butter and brown sugar. Of course my kids were not as pleased, but we adults liked it well. I put the potatoes in covered stoneware and cooked in the microwave for 16 minutes. My oven was taken over by the turkey, so the microwave made a quick alternative.

Vanilla Ice Cream VIII

This was a delicious recipe, but it would probably get 4 stars on taste alone. However, it was so incredibly easy (and with ingredients typically on hand), it must get 5. I couldn't resist following another reviewer's suggestion on another recipe and adding 1/4 c vanilla flavored powdered coffee creamer (I used Italian Sweet Cream flavor). We will make this recipe many times this summer, I'm sure.

Spinach Cheese Manicotti

I give this recipe 4 stars, but with the suggestions of the reviewers, it's a 5. I doubled the recipe, and that made 2 full pans. One pan will make 14 manicotti tubes and will feed 4 adults and 3 kids easily (with leftovers). I used onion powder instead of minced onion (what I had on hand), minced garlic, and added red pepper to the sauce as suggested by reviewers. I added 1.5 tsp. for the double recipe, and it was great. I am looking forward to taking the extra pan out of the freezer in a couple of weeks to enjoy again. I recommend making this the night before and having only your baking to do for dinner, especially during the week. Fantastic!

I really liked this basic recipe. I opted for 1 TBSP of vanilla instead of anise, and I threw in some semi-sweet chocolate chips, too (about 1/2 c). With 1 T of your choice extract and 1/2 c of your choice of any mix-in, this recipe could offer endless possibilities!

Sesame Pasta Chicken Salad

This recipe was very good, and my kids gobbled it up. It seemed like alot of sauce at first, but once I poured it on, it was perfect. If you dish tastes a little too much like vinegar, add a bit more sugar to even it out. Honestly, I used some leftover pork instead of chicken, and it was great. Also, I couldn't help but add some fresh sliced mushrooms, too. Next time, I may add some julienne carrots, too!

Cumin Turkey Burgers

We loved these burgers, even my kids. Sometimes ground turkey can taste dry, but these definitely do not. I cooked them indoors on my grill pan. A foreman grill would work nice as well. I topped them with muenster cheese and bbq sauce- delish!

Creamy Italian Dressing I

Delicious! Even a friend who hates onions raved about it- then I told her there were onions in it! I used Mayan sweet, and since my onion was medium, I used about a third of it. I will make this again and again.

Fast Rice Pudding

WHat a great recipe to use up my leftover rice! Other recipes call for uncooked rice. I usually like to make a recipe as is the first time before altering, but by the picture, I could tell I wanted a bit less cinnamon. I also added about 1/2 tsp vanilla- YUM! It was delicious warm and also good cold.

Tomato-Cream Sauce for Pasta

This recipe was so good...and easy! I must admit I couldn't help but add another clove of garlic and then a dash of cayenne with the other seasonings. It was perfect. I served grilled chicken in strips on top of the pasta and used whole wheat rotini. It was wonderful!

Delicious Ham and Potato Soup

Easy and very delicious. My 5 yr old son said it was our best dinner yet! We served cheese, green onions and sour cream for toppings. While making it, I measured the water, but did not measure the potatoes, and it was still the best. This recipe is a keeper.
