About this Cook
I love the Lord, I love my husband and kids, and I looooooove to cook! I am a stay-at-home mom, which is harder than any other job I had before the kids came along. I like to get together with my extended family and laugh and eat and laugh some more!
My favorite things to cook
My favorites are Mexican and Italian. I could eat enchiladas and chicken marsala every day. I also like to bake. I enjoy the precision of it. Things have to be measured out just right or else you're in trouble. I think my very favorite thing to cook is anything my kids will eat without complaining about it.
My favorite family cooking traditions
My grandmother's fried chicken is better than the Colonel's! And every Thanksgiving my mom makes banana split pie. It has been my favorite holiday pie my entire life. My dad makes amazing chilaquiles. I hope to inherit these recipes some day, but I'd much rather just let the professionals do what they do best!
My cooking triumphs
My favorite cooking triumph was when I was newly married and my husband had been on orders in Virginia for 3 months. I decided to make him a welcome home treat and made my first attempt at Spam Musubis. He loved them and said they were just like the ones he used to eat at home in Kane'ohe, Hawaii. I had never been more proud of myself.
My cooking tragedies
Anytime my kids do not enjoy something I have made, it breaks my heart a little.

Strachan Gelatin Salad
My Grandmother has been making this salad for Thanksgiving for as long as I can remember. Everyone loves it! We affectionately refer to it as "Orange Stuff."

Basic Baked Spaghetti
So delicious! I used sliced up smoked sausage instead of ground beef and also added sauteed mushrooms and onions. There were no leftovers! I made a double batch and gave some to my starving-college-student little brother. He said if I keep making recipes like this, I'll have a permanent dinner guest!
