Coconut Curry Tofu

This was very, very good, but with the addition of a few extra ingredients, I think this could be excellent. I followed the recipe exactly (though I did fry the tofu in canola oil before adding to the curry, and I also used more garlic, more mushrooms, and added some fresh green beans to the mix). I think maybe it needs more chili paste than the recipe calls for, and maybe some fish sauce or something? I'll definitely make it again and experiment with it, but it's a great base for a wonderfully healthy meal.

Butter Bean Burgers

Great flavor! I served these easy-to-make bean burgers on whole wheat buns with sliced avocado, lettuce, tomato and catsup/mustard. These were delicious hot out of the frying pan. I tried reheating the leftovers in the oven the next day, but they lost their crisp texture and tasted too oily. Definitely one to eat up right away, and with how delicious these are, that shouldn't be a problem!

Ratatouille

Wonderful flavor...so warming on a cool night! I doubled the amount of garlic (it could use even more than that after tasting my finished product). I also added a few dashes of dried thyme and used 1/4 C fresh chopped parsley instead of dried. I was afraid it wasn't going to come together right, but in the end the veggies turned out tender but crisp, and all the flavors blended beautifully. I served it over couscous. Great recipe, and very healty!

Vegetarian Ribs

Great flavor! I followed this recipe to a "T", but I did have some issues with my gluten dough. I think the water really should be cut down to 2 cups, instead of 3 cups. My dough was very wet and never once resembled the "ball" the recipe talks about. I had to drain a LOT of water, and I felt like all my paprika was being washed down the drain! When I went to make the "ribs" there was no pulling or twisting going on with the dough...it was more like slopping it into the pan and hoping that it would dry out in the oven! I would also cut the amount of BBQ sauce to 1 or 1 1/2 cups...2 cups was way too much. Other than too-wet dough, the flavor was really quite delicious, and the texture would be better if I used less liquid. I will definitely give this one another try! Good luck....stick with it, even if it seems like all hope is lost. They are very tasy.

Barley and Mushrooms with Beans

Wonderful dish, and very easy to make. I used a mix of fresh shitake, crimini, portabello and oyster mushrooms to amp up the mushroom flavor. This worked really well. I substituted chicken stock for the veggie stock, and added fresh parsley, cracked red pepper flakes, chopped carrot and a splash of white wine, and omitted the celery. I also added salt and ground pepper to taste, and served with a bit of shaved parmesan on top as it very closely resembles mushroom risotto in flavor and texture. Awesome!

Tempeh Reuben

This tastes so close to the real thing, you'll never know the difference. I would recommend sprinkling the tempeh with a little salt and cracked pepper and frying in olive oil before adding to the sandwich...makes the texture better. Great idea!

White Cheese Chicken Lasagna

This was really good...even better the next day. I added some fresh chopped basil, lots more garlic and a splash of white wine to mine....I still feel like this was missing some key ingredient that would bring it to a "WOW!". It has great potential though, so experiment with it. Enjoy!

Fra Diavolo Sauce With Pasta

Easy and so delicious. I used a bag of frozen mixed shrimp, calamari and scallops from Trader Joe's, which worked just perfectly. Very fresh tasting....elicited lots of "mmmmmmmmm's".

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

This recipe is absolutely delicious. The BEST fish tacos my husband and I have ever had, hands down...and we made them ourselves!! Do yourself a favor and give this one a try. And do follow the recipe to a "T"...use the Panko bread crumbs as they fry up so much nicer than regular bread crumbs. Also, some reviewers admitted to omitting the chipotle peppers in adobo sauce, but this ingredient is what makes chipotle mayo just that, so you musn't dismiss it! You can find small cans of these in the Latino food section of any major grocery store. The Panko crumbs can be found in the Asian section of your grocery store. The coleslaw that goes with the tacos is worthy enough to stand alone. I can't say enough about these tacos...just try them! You'll be shocked you could make something so different and delicious in your own kitchen.
